by Charles Bernstein , Chains Editor If you doubt the need for absolute food-safety vigilance, pay attention to this tale from Bob McFadden, owner of Margarita y Amigas Mexican restaurant, West Palm Beach, Fla. "My bottom line went to zero or minus during a foodborne incident over a year ago," he told restaurateurs and chain executives at the National Restaurant Association's winter board meeting in Los Angeles. "Although the cause of the problem has not been proven, I've been hit with lawsuits and even death threats. I have addressed all the health concerns and have been able to welcome back loyal customers who feel empathy for me." Florida health officials confirmed 198 cases of salmonellosis and 873 complaints of illnesses of varying degrees from customers who ate at the restaurant on August 5 and 6, 1995. The officials identified the cause as a bacteria strain called Salmonella Newport. Ten days later, the county public health department cleared McFadden to reopen the restaurant, but only after he had completely overhauled his food-handling procedures. Millions of cases. McFadden was not alone in the problem. Of 80 Florida restaurants inspected from mid-1994 through late 1995, 38% failed to keep foods at temperatures that would prevent foodborne illness, according to the hotel and restaurant division of the State Business and Professional Regulation Department. Inspectors also reported "poor employee hygiene such as failing to wash hands" at 29% of the restaurants.

Among my 1996 highlights were two visits to the much-heralded, super-popular Opryland Hotel in Nashville, Tenn. This glistening propertyvirtually a city in itself, much of it encased in a massive glass dome-type structureis overwhelming. During my first visit, for the Electric Power foodservice conference in April, I and others spent an inordinate amount of time getting back and forth to various events and facilities. But it all could be done with extra perseverance, and it in effect provided walking workouts of 10 or 15 minutes each way to arrive at destinations or rooms within the hotel. Later in the year, I attended the Share Our Strength annual conference at the same hotel, confident that as a return customer I would know all the ropes and could help first-timers find their way around the spread-out maze. But the project had now been expanded by five acres, with a new Mississippi River-themed Delta complex added to the other complexes. Now, it definitely was a glassed-in city, with an added 1,000 guest rooms for a new capacity of 3,000. The entire structuregigantic convention center, lodging and restaurantswas that much harder to get around, taking 20 minutes to go from one end to the other and even longer to find specific meeting rooms in the multifaceted enclosed "city." This indeed is a masterful tourist attraction, and I don't doubt that the almost mile-long hotel will achieve an astounding goal of $70 million annual revenues for just its food and beverage service. The new Delta complex is anchored by Beauregard's, a 400-seat, 20,000-square-foot "dining mansion." It alone could do $10 million sales in its first year.

April is the cruelest month for poetry. As part of the spring ritual of National Poetry Month, poets are symbolically dragged into the public square in order to be humiliated with the claim that their product has not achieved sufficient market penetration and must be revived by the Artificial Resuscitation Foundation (ARF) lest the art form collapse from its own incompetence, irrelevance, and as a result of the general disinterest among the broad masses of the American People. The motto of ARF's National Poetry Month is: "Poetry's not so bad, really."
