Dim sum from Hong Kong, Peking duck from Beijing and char siu pork from Guangzhou are some of the famous dishes, but there are many more that will have you reaching for a wok, and with Chinese supermarkets springing up all over South Africa now the ingredients are readily available.

Some people lure them to the surface by sprinkling salt into the holes they leave in the sand. Everyone knows the cardinal rule when frying spoots, do it quickly. If you go for the long, slow method, you risk ending up with something the texture of a garden hose pipe. Incidentally, spoots can also be steamed or cooked in a sauce. It is a matter of taste how much of the spoot you eat. Some eat only the smooth part (the fruit), while others eat the entire shellfish minus the stomach sac. I know one Sanday man who devours them in true macho style, that is, raw and straight from the ebb. (Serves two as a light meal or starter) Ingredients: 16-20 spoots (fairly small size); 2 tbsp olive oil; 2 cloves garlic, crushed; 2 red chillies (medium hot), finely chopped; salt and freshly ground black pepper. Method: Pour boiling water over the spoots and, when they open remove them from their shells. Discard any that refuse to open. Cut off the fruits and discard the remaining parts.
