I can't be objective about this book because I have adored Irena since I heard her speak at an International Association of Culinary Professionals annual conference years ago. She was hilarious and wise, and I vowed to get to know her.

I have, and now we are friends. I was a guest speaker at her class last year, and she published an excerpt from my book, Will Write for Food, in Food Jobs. So of course I think this book is good reading, practical, and jammed with good ideas and insights.

Coming from a culinary school perspective, Irena begins with jobs in restaurants in food service, then covers retail jobs, art and design. There's a big chapter on media, where you'll find out how people became culinary historians, recipe developers, recipe contest winners, food radio hosts and media trainers, culinary copywriters and television producers. The book moves on to jobs in promotion and publicity, history and culture, science and technology and farming. Throughout are sidebars of advice by luminaries such as Nach Waxman, proprietor of Kitchen Arts & Letters bookstore in New York, and author Betty Fussell. At the end, Irena advocates getting an education, and lists culinary schools, scholarships, and teaching.

I recently had the privilege of attending a lecture by award-winning food writer Irena Chalmers "Food Jobs, Your Career, What's Next?"

Her culinary knowledge is incredible and approach to pursuing a career in the food industry enthusiastic.

I was delighted to find her latest book, Food Jobs 150 Great Jobs for Culinary Students, Career Changers and FOOD Lovers continues in the same venue. Look no further, Chalmers with her wit and wisdom offers everything from ideas to tips, websites, starting your own business, advice from culinary professionals to food jobs you might never have thought of before - fortune-cookie message writer, culinary librarian or ice cream taster.

This is a good textbook, but it is a textbook nevertheless. It covers all key topics and provides good examples. A good introductory text for someone considering a career in tourism. I'd also recommend Kotler's Hospitality and Tourism and Raza's Heads in Beds.

Food and cooking are inspiration to many who are in search of a new career. From its cover and table of contents, this book appears to be the perfect choice as reference material; everything is covered in the culinary field.

Alas, this promise is hardly fulfilled in its pages.

The first 75 pages give a very good summary of available culinary fields and how a hopeful food professional should go about choosing one. But the remaining 300 pages are disappointing; a large number of question-and-answer interviews are given in eleven different culinary fields, mainly of well-known professionals high in the respective careers. Unfortunately, the great majority of those seeking a career will not gain much by reading interviews of the successful few.

This book is more like a broad reference book on the subject, better suited for public library shelves. But the inexpensive binding and flimsy pages would not make it far in that setting.

For those aspiring to work in the food industry, a book more specific to their chosen field would give far better guidance.

This book is a plethera of who's who in the industry and the many different career considerations to ponder. The book is like a menu that really opens one's eyes to the many opportunities in the culinary world. Rick and Anne have been in a unique position to meet and interview the many different people in this book over the past 15 years. The indepth research and dedication of getting this book right for the public really shows. Many of the individuals interviewed and featured really opened up and shared some key ingredients for the recipe for success. The book, Culinary Careers, is an excellent starting point for someone pondering a culinary career.

This guide to culinary careers is terribly overpriced for the information it contains. The quick descriptions of different culinary careers have some value, as do the appendices listing culinary publications and organizations. However, the career descriptions are quite short and the advice is unremarkable. On the topic of finding a culinary mentor, for example, the author advises you to find one. That's pretty much it - no discussion on how to choose a suitable mentor, or how to convince an experienced professional to take you on as a protege. The book mentions the apprenticeship system but doesn't explain how to find an apprenticeship. The section on choosing a culinary school/vocational program is much better, though.

Something trumpeted in both the book description here and on both covers of the actual book is the inclusion of up-to-date information on salary statistics and earning potential for the spectrum of culinary professionals. It must have been printed in invisible ink, because I don't see it *anywhere* (and yes, I have this exact edition). This promise was my primary motivation for getting the book, so I was very disappointed (disgruntled, even) that this information is NOT in the book after all.

Don't spend money on this book unless you're just looking for a quick overview of the career possibilities. That's the one thing the author does well - it describes (in brief) a wide range of culinary careers beyond the obvious white-linen restaurant ones.

This book could have been greatly improved if it had expanded on the career descriptions, perhaps including short interviews with actual culinary professionals, especially those in roles like institutional cooking or food research. Of course it also would have been much better if it had actually included the promised salary information, too.

It's a good book to have in a library or career center, but it's not much use for your home reference bookshelf. ... Read more
