From Down Home with the Neelys: Sweet and Spicy Slaw

Pat: In Memphis, if you run a barbecue joint, you better have coleslaw on your menu and it better be good (ours is some of the very best). Indeed, you could spend a day in Memphis tasting slaw from rib joints all over town. And yet there are people who visit our fair city who are hesitant to try it, especially folks from the West Coast. This is a mystery to me. Coleslaw and pulled pork go together like lettuce and tomatoes on a burger, and salted peanuts in a bottle of pop (I bet some of you haven’t tried that, either).

Bottom line: You come down Memphis way, you have to try our slaw. When we started Neely’s, Tony and I recognized the importance of slaw and knew we would have to come up with a killer recipe, one that would complement our sandwiches and our sauce. It had to be sweet yet spicy, because our barbecue sauce was truly mild. We also wanted it to be coarse and fresh (with a little onion flavor, and carrots for color). A big key for us was using two types of pepper, black and cayenne, which work together as well as Tony and I do. Then came some sugar, as sweet as my Gina. All of these ingredients have given us a coleslaw we are very proud of. For years in the restaurant this was my dish—no one made it for either location but me. I didn’t use measuring cups; everything was done by feel. As we grew, I knew I would eventually have to develop it into a standard recipe so others could make it. Now we have customers who come in and buy slaw by the bucket to take home and have with their catfish, spaghetti, or whatever they are cooking. This recipe will convert even those West Coast hard-liners who claim they “don’t eat slaw.”

Gina: On our show, we like to tease that Pat is the sweet and I am the spicy (only my man knows for sure!). At Neely’s restaurants, the famous and addictive coleslaw happens to be both. We often double this recipe for parties, because leftovers are so delicious (and a food processor makes quick work of all that shredding). When making this slaw at home, it’s a good idea to use both red and green cabbage. It’ll give your slaw more color. Be sure to select the freshest, best-looking cabbage available for the prettiest, crispest, and crunchiest coleslaw you have ever tasted.

Ingredients

  • 1 small head green cabbage
  • 1 small head red cabbage
  • 4 carrots
  • 1 medium yellow onion
  • 1/2 cup mayonnaise
  • 1/4 cup prepared yellow mustard
  • 2 teaspoons apple-cider vinegar
  • 1 cup sugar
  • 1 teaspoon freshly ground black
  • pepper
  • 1/2 teaspoon cayenne pepper
  • Kosher salt

(Serves 6 to 8)

Directions

Cut the cabbages into quarters and remove the cores. Peel the carrots and onion, and slice them into pieces that will fit through the feed tube of a food processor. Fit the food processor with the large-holed grater attachment, and push the cabbage, carrots, and onion through the feed tube to grate. In a large bowl, toss the grated cabbage, carrots, and onions to combine.

In a medium bowl, whisk together the mayonnaise, mustard, vinegar, sugar, black pepper, and cayenne (whisk until the sugar is dissolved). Toss the dressing with the coleslaw, and season with salt and additional pepper to taste. Cover the slaw with plastic wrap, and chill for at least 2 hours before serving.

I watch the Neely's and enjoy many of their recipes.Unfortunately, this cookbook has more of their story than of their recipes.I was a bit disappointed.It is a pretty book if you are a collector or are just a big fan, but I didn't find it to be practical as a cookbook should be. Maybe a follow-up would be designed differently....I hope.

I bought this book for a girlfriend for her birthday! I should of bought 2. I really like the fact that most of the ingredients that are called for are right in your kitchen and you don't have to go to the grocery store.Excellent cookbook with easy to follow instructions, and it turns out just like the picture. Watching Food Network and both of these 2 cooking together, made me want the book!

I actually just used this cookbook last week, AGAIN, after using just about all the recipes included.I stumbled, literally, onto these books a few years ago and I've been collecting and USING them ever since.I've turned everyone in my family onto them too - you just cannot beat these wonderful recipes!Plus, what I probably love the most is that they make getting a nice Christmas dinner together very quickly and easily with the planned menus, what to do a few weeks, days, hours before, and what to get when you shop.It's just a very well thought out book series and I absolutely LOVE them. Great book, this one in particular is a blast to use, highly, highly recommend!

This book is a must-have for any fan of Southern cooking or serious student of Southern culture.Be warned, though, that about a third of the book is a survey of eating places across the South, and inevitably quite out of date, since the book is fifteen years old.(Well-traveled fans of Southern food might enjoy it from a nostalgic point of view.)Even without that part of the book, however, it is still worth it, and it has a fantastic bibliography.

As a Southerner exiled to the frozen tundra of Wisconsin, John Egerton's SOUTHERN FOOD has been food for the soul.And no matter where you are from, this book offers fascinating historical and cultural information about Southern food and many, many wonderful recipes.I have learned as much about Southern cooking in Wisconsin as I did in all my years back home, all because of this wonderful book.It's charming and often lyrical, immensely well-informed, and points the way to both restaurants and recipes.The barbecue instructions have been a lifesaver.I have bought five or six copies of this book--one because I wore out the first copy, and the others because it makes a great gift for practically anyone.

I ordered this book to give as a gift, but I think I'm going to have to get another one for me!First of all, the selection of recipes is amazing.You have everything in here from appetizers, to drinks, to main courses, baked goods, side dishes, and of course, heavenly desserts.As I was reading the pages, I was practically drooling at some of the foods.Then - the PICTURES....oh my if they don't wet your appetite then there is something wrong with you!I found page after page of recipes I want to try, and from the ingredients listed (from being a very experienced cook) I just know they are going to be superb.I have other Southern Living cookbooks, so there's no doubt in my mind the recipes in this book will be fabulous also.I know the recipient of this book will love it - it's a beautiful book and makes for a really nice gift.

I got this cookbook last year and made 7 recipes out of it for a Christmas Eve open house.Every single recipe turned out perfectly and was beyond delicious.I'm not sure what went wrong the with recipes that S. Robinson tried but my experience was the absolute opposite of hers.
Here's what I made:
Buttery Blue Cheese and Walnut Spread (served in a bread bowl-yum! I don't even really like blue cheese and I loved this dip)
Gingerbread Bites with Orange Cream Cheese Frosting (my neighbor couldn't even speak when she tasted these because they were so good-and she still talks about them a year later!)
Pear and Goat Cheese Tarts (Gourmet and foolproof, these are excellent hot or cold-they might make you cry, they're so good)
Sparkly Cranberry Scones (so easy to make it's silly-I have used all kinds of different fruits in this recipe and they turn out perfectly every time)

I have to note that I am not an extremely experienced cook and although it took me a lot of time to make all of these, they weren't difficult.
I can't recommend this book enough. I also bought the Willams Sonoma Holiday Entertaining book and it just sat forlorly on the shelf, while this book got heavy use.I have about 30 more post-it notes in it on the recipes I still want to try!

Boy, do I ever love these books!Each year this time I always start looking for both these Southern Living books for Christmas, as well as the Gooseberry Patch books.Not sure which of the two is my favorite, they've all been mostly wonderful and I cook from them throughout the year.This one I liked in particular because it is broken down into menus.And, when you're in a hurry, that sure helps out a bunch!If you don't buy it for any other reason than for the coconut cakes on the front cover, it's money WELL spent!Wow, what a great recipe!Even went out and bough a special pan to make them.Yum!I don't know how Southern Living keeps from running out of ideas each year, but this one's definitely a keeper!I'm off to order the new 2009!It probably won't help my sagging cabinet shelf either - too many cookbooks already!Oh well!Highly recommend! ... I love this book!!I had originally bought this book for the wonderful
christmas decor ideas...great centerpieces, table scapes, wreaths..ect.
I happen to decorate my house in a very "natural", woodsy theme and this book has loads of those...all just beautiful.To top it off, it has wonderful recipes too! Many times you will get a book like this and it will have a few things you love but the majority is so so. Not this one, I can say that I love everything in this book! Great purchase.

This was my first purchase of a Christmas With Southern Living book and I was quite happy with my purchase and am anticipating the 2006!!I took this to my parents one weekend when my sisters were there and they all wanted a copy.I used quite a few of the recipes from the book for my Thanksgiving Dinner and they went over well especially the Butter Coconut Pie--YUMMY.As I am not a seasoned CWSL book buyer I don't have others to compare it to (except for one from the 1990's my sister gave me which I felt was not half as nice as this one)but would give this ***** five stars. ... Obligatory reading for anyone who's a food geek, especially if you are a barbecue wonk. If you've spent a whole day (or night) cooking a 10 pound pork shoulder or obsessed about which combination of 15 spices will taste best on a chicken thigh (and really, who hasn't?) then this book is for you.

About three quarters of the book is dedicated to barbecue - the rest is dedicated to southern cooking and food, including a chapter on a geophagy, something I never heard of... the eating of dirt. Who knew that mudpies were a nutritional staple in some parts of the world!!??

Overall, it is very good writing on a specific topic - you'd better like barbecue enough to read story after story about it - which makes it not for everyone, but great read for those looking for it.

The Southern Foodways Alliance was founded to celebrate, teach, preserve, and promote the food cultures of the American South.Cornbread Nation 2: The United States of Barbecue is a collection of stories, poems, and essays about the foodways of the mountain South. It is one of a continuing series which includes Cornbread Nation 1: The Best of Southern Food Writing, Cornbread Nation 3: Foods of the Mountain South and Cornbread Nation 4: The Best of Southern Food Writing.

Lolis Eric Elie writes in the introduction: "Other foods cover the geographic expanse of this nation, just as barbecue does. You can find fried chicken, hamburgers, hot dogs, and pizza from coast to coast. But none of these foods enjoy the great regional variation that barbecue does. None of them exemplify the competing themes of American unity and diversity as barbecue does. You don't hear heated arguments about the fundamental differences between the hamburgers in Albuquerque and those in Altoona. Hamburgers just ain't that deep. As John Shelton Reed reminds us in "Barbecue Sociology: The Meat of the Matter," "Southern barbecue is the closest thing we have in the U.S. to Europe's wines or cheeses; drive a hundred miles and the barbecue changes."

While there are a few non-barbecue pieces in this second edition of the series devoted to southern foods, barbeque is the name of the game. It points out that getting together for barbecues was popular before the Revolutionary War. George Washington hosted barbecues including one at Accotinck in May 1773 and buying flour "for barbecue" [for biscuits?] in August.

"Barbecue" is an amalgam from the Haitian "barbacoa" and "babracot," believed to be from Guianian Indians, according to the "Oxford English Dictionary." Fish or meat were cooked over a fire on a wooden grill of sticks set on posts. There is still intense debate over whether the best barbecue is pork, beef, chicken, fish or lamb. As Elie points out: "Though the various versions of barbecue differ from each other as much as cows differ from sheep, or as much as tomatoes differ from mustard seeds, the common themes of wood and smoke, meat and sauce, family and fellowship transcend regional rivalries and recipe differences."

This edition is padded out with a few non- barbecue pieces which are well worth enjoying. Pat Conroy teaches us that food and funerals go together in "Love, Death, and Macaroni." John Martin Taylor is eloquent on boiled peanuts. Susan Allport's "Women Who Eat Dirt" describes a practice common in the south, and even now in Harlem grocery stores there are enormous offerings of starch, not for starching shirts but to meet the need for "clean" earth, awfully hard to come by in New York City.

At one time, New York City was considered a barbecue wasteland, like Paris, London and L.A. But there is a new smoker technology that the Department of Health has approved, and a number of topflight barbecue restaurants have opened here. If you find your mouth watering after reading some of these pieces, you'll be able to satisfy your hunger for an authentic style. As this excellent book proves, making that choice is not trivial.

This is a welcome addition to a promising series, although it is slightly misleading, due probably to the nature of the series. It is only about half to two-thirds about barbecue, although within that are some really terrific and far-ranging essays. The balance is about other Southern foodways, including boiled peanuts (as a previous reviewer noted)and boudin, although any book on any subject is enhanced by Calvin Trillin's contribution. He HAS written on barbecue (indeed, his piece on Arthur Bryant's is a landmark), but the Cornbread Nation does not promise to be inclusive. It sho' nuff makes one hungry though!

Cornbread Nation 2 should have been printed using waterproof paper! Reading the varied writings contained between its covers will have anyone who appreciates barbecue drooling like Pavlov's dogs.
Elie has done a masterful job of assembling some of the most vivid food writing-on barbecue-imaginable. The depth of subject matter is both stunning and satisfying in what it brings to the table.

It is my opinion that including Smith's Rhetoric of Barbecue treatise is alone worth the investment in this book. Often quoted as snippets in other books,here it is in it's entirety for the very first time.

Quite simply, this is a book to be treasured by anyone who loves barbecue, southern culture or U.S. history. I can safely bet that once you begin reading Cornbread Nation 2, you'll find yourself becoming ravenous for some good slow cooked barbecue! ... Read more
