Dr Carlson has written this so anyone can understand his book,It lays out simply what the deal is with nutrition.It is the kind of book I would write to pitch at those with a basic education because it is clear and uses plain and simple English to explain the problems with our food and why our doctors are woefully lacking in nutritional knowledge.

It is a good general book to start your journey of discovery into the wild and wonderful world of how our food is produced and how a western diet of cheap modern processed convenience foods can ruin your health.

It is not for the advanced reader but it forms a useful adjunct to help people who have not perhaps had a university education understand the basics behind what is going on.It is therefore written for the common man and is pitched to them as the target audience . I found it a very easy read which presented a concise distillation of what I had already gleaned from the internet and my book of biochemistry by Stryer.

It is a very good book in that it forms a primer, but it by no means has all the answers but it is a good instrument to challenge your doctor and make him re learn his biochemistry, and make him/her think, rather than just fall back on his usual patterns of diagnosis manual which he has been taught to follow blindly.

It is a truly fascinating book.

He is a good writer in that he lays the info out in a way that the reader can understand.

I'd recommend this book to anyone who thinks that they can't do anything about cholesterol.
Low-carb is the ONLY sane way to eat.

I'm giving it a 4 simply because I agree, he needed to work on the proof-reading.

Dr. James ROCKS! Wow!I just read the book and learned so much. I have been low carb dieting for a while and I love it. I have beaten Type II Diabetes after being on meds and an Insulin pump. The doctor will not steer you wrong with this outstanding advice. I know from experience what happened in my life with the weight loss and now great health. I am 54, I just ran my first marathon and plan on another one. I feel like in 30 and I have my life back. Dr. Carlson's book tells my journey. Now I know what was going on inside of me all the time!!

Do NOT miss this read. It is fantastic!!!

This is a must read!Dr. Carlson has written this in simple, easy to understand terms.As you read it, you will be thinking to yourself, yes, that makes sense!Dr. Carlson has a biochemistry and cellular background, and can prove what he says is factual.

Unfortunately, all the decades of eating low fat, high carb, (sugar, sugar, sugar) has led to coronary artery disease. Now as a heart patient, I am following a low carb. lifestyle, staying away from sugar,(in all of its' forms!) as much as possible. My first blood test my Triglycerides dropped 50 points from my previous blood test, now at 135. This is an example of how "not" eating low fat, can reduce your important health numbers.

When I follow Dr. Carlson's recommendations of low carb, no sugar, I feel better and have no heart burn. Many do not correlate the carbs they eat with heartburn, but they are absolutely tied together.Reduce your carb intake and you will reduce, if not eliminate your heart burn.Every person I know who follows this positive way to eat has had the same results.

Pick up this eye opening book. The facts speak for themselves. You will be glad you did.

PS - Dr. Carlson has been my physician for 5 months. 4-0 out of 5 stars Greatly In Need of Editing - but Great Message
Genocide, a book about eating healthy by avoiding sugar, has a subtitle of "how your doctor's dietary ignorance will kill you!!!!" That quadruple exclamation point gives you an indication of how this book will read.

The first thing to be aware of here is that this book did not go through much editing. Normally I am all in favor of self published books, but the process requires a solid team of "friends" who do the editing for you. It was really missing in this case. You have to be very patient to read through this, past the many errors, the multiple strings of !!!! and !?!? and SHOUTING LANGUAGE and back and forth commentary. It several instances this "technique" of writing makes the actual message very hard to understand.

Even more strange, he left justifies EVERYTHING in the book so the paragraphs all run together, and he has massive spacing between lines making the book much thicker than it needs to be. Does that make the information seem more weighty?

On to the message. Author James Carlson has been a doctor for many years and has always advised his people NOT to follow low carb diets - until he read an actual book about low carb diets and realized just how they work medically. Suddenly he understood that they were about removing sugar from your system, and he realized just how critical that was for his patients. Almost overnight he switched to a low carb diet himself and put all his patients on low carb diets - and saw amazing results.

He explains that cholesterol in the body RARELY comes from eating cholesterol. Most of the time it comes from eating sugar that the body then converts into cholesterol. In the same way, triglycerides don't come from eating fat. They come from eating sugars which get converted in the body. These are medical facts that most people aren't taught. Therefore, as they gobble up high-sugar diets with soda and cookies and ice cream, they are causing their own cholesterol problems and triglyceride problems. Their doctors then blame the issues on them eating meat and fat - so they cut back on those, and things only get worse.

James talks about why looking at "calories" in a food item can be meaningless. Literally, the biological measurement of a calorie is taking a food item (say a Big Mac), putting it into a beaker and lighting it on fire. The calories is simply how much heat (actual heat with a thermometer) that Big Mac causes. The problem of course is that a human body digests foods quite differently than a burning match! Just as one example, you can set fiber on fire. It burns quite nicely. However, when you EAT fiber, it goes in one end and out the other, sort of like a scrubby sponge to keep your system clean. It doesn't cause you to gain weight or anything. There are many other similar situations in the human body where the way we digest (or do not digest) something is vastly different than how a match would burn it up in a beaker.

James warns against the dangers of trans fats - something we should all know by now. He warns that the food pyramid with its emphasis on eating tons of grains is wrong. I agree with those. On the other hand, he bashes vegetarianism as being completely unhealthy, which I disagree with. Also, he claims stevia is a blend of hundreds of herbs. Actually, stevia is a green, leafy herb that grows in Central and South America. The official name of the plant is Stevia rebaudiana.

Still, there are only minor errors in a book chock full of solid medical history and explanation. One quote that every doctor should read is on ketones. He says, "I have heard some docs say that you can lose weight but there should never be any ketones in the urine. This is dietary ignorance at its finest. There is absolutely no way to lose fat without the creation of ketones, because ketones are the byproduct of fat digestion. If we are digesting and getting rid of fat, ketones will be created. End of story."

He has several sections dedicated to PCOS and pregnancy, explaining how many women he's helped by getting them to cut sugar from their diets. Many women who were infertile suddenly got pregnant once they reduced their sugar intake and began eating more healthily.

He had one patient with a blood sugar of over 400. In only a few weeks of cutting out sugar and focusing on low carb, his blood sugar was at 150. He has story after story with these results. He's helped people with GERD, and since overweight / obese size has been directly linked to cancer rates, he honestly feels this is saving lives every day.

Finally, for people living on a budget, look at this stat. $65.7 BILLION dollars a year are spent just on coronary artery bypass grafts and angioplasties. Another $22.9 BILLION dollars a year are spent on diabetes II care. We all pay those prices in our insurance premiums. The money you pay into taxes and health care premiums could be vastly reduced if we weren't all paying out those high costs for drug companies to fix people and pump drugs into them.Think of what our society could do with billions of dollars "free" and available for people to spend on other things! It is a sobering thought. One can only hope that more doctors - and food pyramid creators - read this information and start to actually understand it.

So to summarize, the message is great. The science provided to prove the message is great. It makes very clear even to a layperson why every human should be vastly reducing their sugar intake. My only wish is that the book go through a serious editing process, so that it becomes readable to many more people.

As a final note, author James Carlson is a Doctor of Osteopathy, which is "separate but equal" to a Medical Doctor. I had no idea there were two "types" of doctors in the US which were both equivalently licensed to practice medicine. It's very intriguing, and worth a read on Wikipedia. ... Read more

A. Introduction

Although I do enjoy great food prepared by others much more talented and patient than I am, this reviewer never developed a sense for consistently caring for, and preparing,his own healthy food. But this book changed all that, in a practical and eye-catching way.

B. What I like about this book

In terms of format (presentation and appearance), the front page says it all: a) a 23-word title, b) three color-pictures with relevant food groups (walnuts, spinach, and smoked salmon), and c) the lead authors names with a mini-résumé behind their names, establishing their academic credentials (MPH, RN, LD, CNS, LDN, Ph.D., etc). As for the back page, instead of the standard endorsement by food industry and nutritionist celebrities, the authors and/or publishers have decided to reserve this space for providing more information about the book's content, and quizzing (via Multiple-Choice-Questions) the potential reader about his/her nutritional savvy, and listing no less than 10 recipes described in the book. On top of all these benefits, the book is reasonably priced ($19.95 US; £12.99 UK; $23.95 CAN)

As for the CONTENT (and substance): In addition to a section for Acknowledgments (pp. 184) and an elaborate index (pp. 186-192), the book is structured around the main food groups essential for good health:
* Introduction (pp. 7-23);
* Chapter 1: Boost Omega-3's (pp. 24-54);
* Chapter 2: Add-in antioxidants (pp. 55-85);
* Chapter 3: Fabulous fiber (pp. 86-117);
* Chapter 4: Change the energy balance (pp. 118-152); and...
* Chapter 5: Be carb savvy (pp. 153-183).

The introduction is worthy a separate mention: in this 17-page exposé, the authors introduce the readers to the basics of nutrition and principles for gaining and maintaining good health. They do so with a) two-column text; b) five tables, three figures, and two pictures! As they say, "A picture is worth a 1,000 words..." In this well-illusstrated book, the authors have made good use of the one picture/thousand words concept!

Each chapter basically follows the same pattern:
* An introduction to the subject with a two-column text;
* A `FYi' insert in the shape of text surrounded by a circle;
* A series of two-page recipes, with text on one side, and a full-page color photograph on the other page. The mouth-watering rendition of these full-page and full-color recipes is worth, by itself, the price of the book!

Each full-page recipe contains the following...
* Introduction to the recipe;
* Measurements of ingredients;
* Description of the various steps in the recipe;
* And finally a nutritional analysis (i.e., calories, fat, protein, carbohydrate, fiber and cholesterol content, if any).

Many, though NOT all, recipes come with full-page color photographs. Some recipes are illustrated with a two-page photograph a) `Flaxseed blueberry walnut pancakes' (pp. 98-99); b) `Fiesta gazpacho with grilled shrimp' (pp. 128-129); and c) `Orange mango chicken fajitas' (pp. 140-141). In particular, I like the recipes for...
* `Smoked salmon sushi' (pp. 46-47); and
* `Mediterranean stuffed tomato' (pp. 74-75).
* Of particular esthetic, culinary, and other value to this reviewer is the recipe for `Peach-berry Port Wine Gelatin!' (pp 176). The adjoining picture features no less than three delicious berries, namely raspberries, blueberries and blackberries (thank goodness, not the electronic types).

I also appreciate the great care the authors and publishers have given to the authors' background (See `About the authors,' pp. 185). Two engaging full-color photographs of the two authors, with matching informative and descriptive caption(s).

C. What can be improved

Alas, as much as I wish, as a book reviewer, to find something to gripe about a book under my review, in this case I could NOT find anything substantial.Since it is NOT designed to be an academic book, there is not need to complain about the absence of footnotes, endnotes, and references cited. This makes it all the more readable by its intended audience.

I am fully and painfully aware that Rowe and Davis did NOT get the fullest acclaim they deserve.Some reviewers take the authors to task about including canola oil (e.g., Telecia Radke), tomato recipes (e.g., Dr. Loulou) and omega-3 to 6 ratio (e.g. Dr. Mark S. Edinger). As any person who has lived long enough has discovered and knows, one cannot please all the people all the time. In my own medical school training, we was told tomatoes are good for our health as a good source for antioxidants. Now, according to Dr. Loulou, tomatoes should be avoided at all cost! Whom am I to believe? Same thing with canola oil. If you don't like it, leave it...! But please, do NOT ever ruin a book's rating (20%), just because you happen to find canola oil or tomatoes toxic for `your' body. If it is as toxic as Telecia says, why doesn't the FDA ban its import from Canada? With a rating of 1/5, Dr. Mark S. Edinger does NOT earn points for charity, compassion and generosity towards the authors (1/5 stars = 20%). Was the omega 6 to omega 3 ratio the ENTiRE concern of the book? If NOT, why would Dr. Edinger give such a low rating? Does he not remember that we will be judged by the measure we judge others... And I dare NOT judge Dr. Edinger, whether he is a lowly doctor in some rural county clinic, or the chief medical adviser to the latest Pope, as a rating of (-) infinity would NOT do proper justice to his misplaced impudence and utmost arrogance. In such important matters of truth vs. untruth, I'd rather be known as a no-respecter of persons...

This book has been published in 2008, and this review written in 2010. In two years, much can and does happen, requiring, amng other things, the update of the authors' biosketch. I can think of at least three-five things in the life of the LEAD author that may need to be updated in the next edition of this great book: a) city of residence, b) marital status, c) number of people living at home, d) possibly even her new vocational status, and e) update on the number of dogs living with the author at home.

In the acknowledgment(s) section (pp. 184), lead author Barbara Rowe mentions the need for, and assistance of, food tasters and testers. In anticipation of a new, revised, and improved, edition of this otherwise GREAT book, I endeavor to apply for the newly created official position of `food taster cum food tester...' Besides tasting the food, as a semi-professional photographer (or advanced amateur), I can also double as a self-appointed graphic reporter for the book's many recipes. If and once that happens, however, I could no longer write an impartial review, as it would be an inherent conflict of interest, being a food taster cum photographer vs. an objective book reviewer without any vested fiduciary interests!

D. Conclusion

This highly readable book is a great value, i.e., getting the proverbial most `bang for the buck!' [where else can one find a recipe with a full-color picture for $0.137 or 14 cents per recipe, assuming there are at least a hundred of them in this book?] Furthermore, it can change a reader's approach to his/her health through the preparation and consumption of a great variety of healthy and health-promoting foods. I suggest this book should be a daily companion of any housewife and/or househusband, or whoever prepares the meals for the loved ones in every English-speaking household in America and around the world... [A translation into major languages such as Spanish, French, Italian, Russian, Polish, and German, among others, should follow in short order...] Its place is on the kitchen counter, rather than collecting the proverbial dust on the shelves in one's personal library!

Tonight I made the Pink Salmon Cakes with Mango-Raspberry chutney and it was spectacular!Have tried several salmon cake recipes but this is TRUELY THE BEST I have ever had!It was light and deliciously full of flavors of the mango, raspberry, sweet corn and tomato..a great summer dinner.Husband doesn't like cilantro so I used parsley instead.Can't wait to try the other recipes!!!

This book starts out great with the discussion of how food can inflame the body with an unbalanced intake of omega 6 and omega 3 fatty acids.However the authors must be unaware that all grains, legumes and most seeds have a 20:1 ratio of Omega 6 to Omega 3 making them inflammatory.Several recipes in the book are then inflammatory because of the grain.This is a tough pill to swallow but it appears that the human genome functions better with a balanced 1:1 ratio of omega 6 to omega 3 fatty acids and this genetic trait was in place before agricultural practices which led to grain consumption and more recently seed oils which are very inflammatory.Foods consumed prior to agriculture would have been fruits and vegetables, wild game, fish and moderate portion of nuts. Although there are good recipes in the book, I am amazed the authors endorse the use of canola oil and margarine.Canola oil comes from the rape seed, which is part of the mustard family of plants. Rape is the most toxic of all food-oil plants. Like soy, rape is a weed. Insects will not eat it; it is deadly poisonous! The oil from the rape seed is a hundred times more toxic than soy oil.
Canola is a semi-drying oil that is used as lubricant, fuel, soap and synthetic rubber base, and as an illuminant for the slick color pages you see in magazines. It is an industrial oil and does not belong in the body!
Margine isa synthetic food and a hydrogenated oil.Loads of literature to support eliminating it from your diet.
I use the recipes but make substitutions.

You may not like the ideas in here, but if you have diabetes or high cholesterol, this diet could add years to your life.Very readable.I started eating this way, and my blood sugars dropped.

Did you know that reducing the fat intake of your diet to 10% or less will reduce your cancer and diabetes (type II) risk close to zero?

As other reviewers have accurately stated, following the recommendations of this book will change your health and your life. Healthy eating (eating foods with less than 10% overall fat) is essential for a healthy body and mind.

Written 15 years ago, this book's science remains highly relevant today. The recommendations of this book are particularly relevant for those with diabetes, heart disease, high blood pressure, high cholestrol, obesity, and hypertension.

The book starts with a startling fact: 90% of Americans have atherosclerosis (thickening of the blood vessels by fatty materials and cholestrol). This is bad news since atherosclerosis is very very bad for you. Atherosclerosis and high body fat will probably substantially shorten your life and bring about host of health problems (cancer, diabetes, high blood pressure etc). It is important to note that the author disagrees with American Medical Association (AMA) on the pervasiveness of atherosclerosis. The author argues convincingly, however, that AMA sets their bar on healthy dieting to a VERY low level. If you are overweight at all (book provides weight charts), you will almost certainly have atherosclerosis.

So how do you rid of yourself from atherosclerosis and high body fat? Eat foods with less than 10% fat, eat foods in small portions (approximatley 2000 calories a day), and exercise regularly.This is FAR harder than it appears since most foods you see on the menu of most restaurants have higher than 10% fat.

It is important to note that the author does NOT try to convince people to have less than 10% body fat. For males, 15% body fat is OK and for females 24% is OK.

The author provides plenty of dietary suggestions and nutritional data. It even has a short cookbook.

What do you get if you follow the book's recommendation? You will be slim, fit, and free of most troubling diseases such as cancer and diabetes associated with atherosclerosis and high body fat.

Ray Kurzweil writes in a methodical and logical fashion that leads the reader to understand the power of his findings. Our typical American diet is a killer; his 10% Solution is the cure. The hard part is the discipline needed to change our lifetime eating tastes and choices. The avoidance of cancer and heart disease seems worth the effort.

Normally I like Ray Kurzweil's books, but this one is not among those.There is nothing original in this book!Don't waste your money! Its better to read Dr. Joel Fuhrman MD (Eat to Live), and Dr. Dean Ornish MD (Hart Disease Reversal Prog.).These two are actually practicing physicians and can offer insights into the experience gained through work with many patients.Anyone could have written a 10% solution by reading these two sources alone.Ray Kurzweil can do better than this, for example his "Fantastic Voyage" is quite good.

I own and have read this book as well as the newer follow up (published in 2004).

This book is now nearing 15 years old.I read it very recently and began to employ the methods taught in the book.It was not until reading Kurzweil's newest book that I saw he has changed many of his ideas since the writing of this book in 1992-93.

For example; in 10%, you should not eat more than 10% of your calories from fat.Carbohydrates are encouraged, sugar is not *that* big of a deal, and caffeine is the enemy. In the new book, fat can be 25% of your calories each day, carbohydrates must now stay very low, sugar is to be avoided at all costs, but caffeine is ok!In fact, the author now drinks 8 cups of green tea per day.Green tea is lower than coffee in caffeine, but 8 cups a day is still a lot of it.

I enjoyed reading this book, but I wish I had realized that the information contained within was out of date and no longer to be followed.It would have saved me $20. ... Read more
