I have been making pizza using the thin crust recipe and the simple sauce recipe in this book and they have been outstanding.The key with any at home pizza is using a good quality pizza stone and an oven that can get high temps.I have an oven that goes to 550 and that combined with an 1 inch thick stone, this recipe works great with this setup.It is really a simple recipe and is ready in a couple of hours.The dough you can get very thin and is very flavorful.Overall, this book has lots of good pizza recipes that use a couple of different base crusts.I highly recommend this book if you want to start to make pizza at home that tastes like what you get at the restaurant.

I have yet to find a recipe from a Restaurant that is not sabotaged in some way. So, I really can't complain because I rather expected it. I was looking for a simple pizza recipe to get me started, pretty much knowing I'd be left on my own common sense for what is missing from this recipe. All I can say is, don't trust the measurements, use your common sense. Upon initial perusal I could see that the pizza sauce recipe had no liquid content. The sauce recipe was about 5 ounces short on tomato paste and another cup or two short on liquid (water or tomato sauce).The dough recipe was about 2 cups short of flour.But it ticks me off when restaurants (this was the only book I could find, after checking several others, that had a pizza recipe in it) make cookbooks when they really don't want you to cook, they want you to go to their restaurant. Besides some interesting ideas on dessert pizzas, you are best off just surfing the web than wasting your money on this book.

1/ Appertizer, salads, and panini sandwiches
2/ Specialties from menu, including chicken dishes and pizza
3/ Kids pizza party
4/ Dessert pizzas
There is not many recipes for pizza section which is not what I am looking for.However these are the pizzas you see they have at restaurant.
It seems the appertizer section is more interesting than the pizza section.Kid pizza party is ok.There is just a few for desert pizza.

To be fair, I haven't tried any of the recipes in this book, although I have copied one for Italian Ice that looks good.But the book is going in the "to the used bookstore" pile because the writing style is just annoyingly juvenile. Chatty, breezy books are one thing, but this book just grates on me.Every other sentence starts with, "OK" or "Well, ..." Not everyone's a gourmet and nor do they want to spend the hour or so making pizza(s) that some of these recipes seem like they'll require.

Most of these seem to have pretty long ingredient lists and seems a bit over-complicated. Honestly, I prefer the simpler approach taken by Keller in Vegetarian Pizza Cookbook. Plus Keller seems to provide far more pizza crust options (including dessert pizzas, etc.).

This book just seems to be trying too hard. Seems to me that, while variety is certainly the spice of life, one shouldn't over-complicate pizza.

Lots of neat ideas for pizzas - they're more gourmet style than anything.Each recipe has a picture which is just wonderful - large, colorful.The recipes themselves don't get me all that excited.Some of them are things that you might have for dinner (like a salad or a chinese stir-fry) and the author put them onto a pizza crust. But there are some interesting ones like the spinach pizza (sauted spinach with garlic, raisins and pine nuts put onto a pizza crust with melted cheese) and some ofthe eggplant recipes are neat.The Athenian pizza is excellent - feta, red onion, mushroom, olives etc baked on the pizza crust.And there are some interesting ones that I'm looking forward to trying that use different pestos.Overall good cookbook with inventive ideas and very pretty presentation that you could easily serve to guests.

The unbelievably beautiful photographs (taken by the writer himself) showed me uses for things I never would have dreamed of putting on a pizza--okra, eggs (sunny side up!), fruits, and a wide variety ofvegetables such as cauliflower. McNair is a bit of an ingredient-snob (heseems horrified by the idea that anyone would use anything but a tomatoripped from the vine moments ago to make a pizza).That said, the bookwill help you unleash your creativity before you stick that Boboli in theoven.A few really ambitious people might actually try to follow one ofthese recipes, which would be quite an adventure, and one with a deliciousconclusion.

My husband and I love pizza, and after a trip to New York and tasting the brick oven pizza, we had been looking to re-create that taste in our own kitchen.So we went to a williams sinoma and bought a pizza stone.While there we wanted to also pick up a pizza recipie book too. We could only find one about grilling pizza, and it was like 40$.Curling our nose up we decided we would look on amazon for a cook book about pizza. We tried the pizza stone, it really didn't work that great.So, I went on amazon looking for help with the pizza stone.I only found books on grilling pizza!I found this one and considering it was only 10$ and considering all the rave reviews, I said why not!We got the book a week ago and we have had pizza on the grill 4 times!It's totally awesome!It's better than brick oven pizza from new york!We haven't really stuck to any specific recipie in the book, except for the handmade dough recipie (which is awesome, use a fork to put the ingredients together) and the tomato sauce recipie (which is also awesome) Smoked sharp cheddar cheese is great on it too!And bacon!Goat cheese rocks!And real mozzerella! And fresh basil! There is a recipie for a seasoning blend, that is awesome!The whole book is just the S@*t!. We have been so proud of ourselves for doing this, and it's so fun and cool to do it together. I bet this would be great for kids too. If you read all the instructions a couple of times and do it, it turns out just like the pictures in the book.Get a cheep pizza peel!Target has one for like 10$ put some mineral oil on it, (It's sold as a laxative in the pharmacy) If you don't oil your wood pizza peel it warps and cracks.I like to use a rolling pin to roll out the dough, with the grits of course, on the pizza peel. That way you're less likely to get tears in the dough.I hope you get this book if you are thinking about it!It rocks! Good luck! liza

This is a fantastic book. As we all know, the crust is the single most important part of the pizza, and these guys have it down. They're very specific in their methods of cooking, and have many creative ideas for unconventional pizza's. also once you get the basics down they encourage you to modify and enhance any of the recipes they have.

I started making pizza on the grill after reading a small blurb in a local paper. For anyone that has ever attempted to make pizza at home (with less than stellar results) and used a BBQ (in any fashion) it is hard to get results that are anything less than fantastic. This book will get you to that level and more with it's creative topping ideas and alternative sauces that will exceed 99% of the commercially available delivery pizza out there. You owe it to yourself to learn this art and loose your local pizzeria's phone number. These days I keep a ball of homemade dough in the refrigerator ready to go at any time. It's that easy.

I haven't had a chance to make many of the recipes in the book, because I'm stuck on the Chicago style Stuffed Pizza! The biggest part of the book is techniques/tips for doing the sauces and crust, which is going to apply to any recipe for pizza you will try. There are also lots of websites around with additional tips, just google for 'chicago pizza tips' and you should find them. Everybody has their own variation, but this book gives you a base that will surprise your friends with its authenticity. You can also pickup restaurant quality deep dish pans here on Amazon, and save a bit of money with shipping. Great stuff!

.....but to use this book regularly you must be rather adventurous!!! I've made several of the more "standard" pizza recipes in this cookbook: Pizza Margherita, Potato Onion and Rosemary Pizza, Pizza Marinara, Black Olive Pizza, and Marinated Zucchini Pizza, all of which were excellent. There are also numerous calzone recipes that look scrumptous that I have yet to try. However, be prepared to try some "pizzas" you may never have heard of: tuna and egg pizza, sausage and apple pizza, curried fruit and cream pizza, banana and ricotta pizza with ham, orange and Grand Marnier pizza among others!!! Let's just say I'm waiting for the right mood to strike me before I try any of the latter category.

Some lovely added components of the cookbook include recipes for a variety of different doughs and instructions on how to make calzones. If variety and adventure appeal to you in particular - go for this cookbook.

This is a handy little cookbook for the busy worker with pizza lovers depending on them at the end of the day. It covers pizzas for family meals, party pizzas, what they call "Pizza in Disguise," and pizza as an appetizer, pizza as a dessert. The book pays special attention to the first-things-first,details for handling the dough, how to make the various crusts, topping tips and the importance of allowing, like roasts, the pizza to cool a few minutes for better flavor.
