(Remi: Culinary Artist to Presidents and Hollywood) At eight years old, Remi Vila Real first learned to cook for a large farm or "Fazenda" in Minas Gerais with her Grandmother. From the start, it was apparent that she had a gift for cooking. Soon, she was cooking for 20 workers in the field, getting up in the morning at 3 in the morning, putting a piece of wood on her head, and carrying everything necessary to keep the men working all day in the hot Brazilian jungle, cooking 3 meals a day. From there, her culinary gift took her to the houses of wealthy and famous people in Belo Horizonte, Sao Paulo, eventually making her way to Rio, cooking for politicians, musicians, and artists including the president of Brazil. In the late 60s and early 70's, Sergio Mendez took Remi to the United States and Hollywood where she her culinary skills have enchanted many famous people including Michael Jackson, Quincy Jones, Elizabeth Taylor, Tom Jobim, Paul McCartney, Harrison Ford, and many many others.

Brazilian Barbecue
Dateline: 06/12/99 More than 400 years ago cattle ranching was introduced to the Rio Grande do Sul region of Brazil. Cowboys, called Gauchos herded these cattle, and like the cowboys of Texas created a new style of cooking. They called it Churrasco, which is Brazilian Barbecue. Though this style of Barbecue wasn't based on smoke like that of the United States, it has all the traditions and elements of an American Barbecue. Churrasco started in the 16th and 17th centuries and spread throughout all of Brazil in the 1940's as the Gauchos spread across the country. Originally the standard formula for Brazilian style barbecue was to coat meats in coarse salt. The meat would then sit for about 30 minutes to absorb the salt and then was placed over the fire. Later a salt-water baste was used to keep meats moist during the cooking. Beef was typically never seasoned. Poultry and lamb, however are spiced with a rich marinade the night before cooking. Ask Eng Tie Ang what her nationality is and she will answer "Brazilian" without a second thought. And she is Brazilian. She was five when her parents emigrated from Indonesia to Suzano, a town in the interior of the state of São Paulo. It was there that Eng Tie went to grammar school, high school, and the University of Braz Cubas, where she graduated from the School of Architecture and Urbanism. When, at age 21, architect-painter-cook-instructor Eng Tie Ang swapped Taiwan for the US and decided to study at a computer college, it was her Brazilian food knowledge that helped her pay for the studies. Settled in Seattle, where she has worked as an architect for two years, Tie finally decided to make her cooking expertise her main career. Today she teaches Brazilian and Thai cooking at the Washington University in addition to schools like Kitchen Kitchen and Bon Marché. The new revolution in food is now occurring in the United States, not in France," proclaims Chef Claude Troisgros, scion of the famed Troisgros family of Roanne, France. Surprising words from a chef born and trained in France. The Troisgros family has provided France with some of its most creative, adventurous and famous masters of French cuisine. Claude's grandfather, Jean-Baptiste, created a furor in gastronomic circles when he first paired fish with red wine four decades ago. His father, Pierre, and his late uncle, Jean, turned their family's modest restaurant in Roanne into the celebrated three-star Michelin restaurant, Troisgros. The Troisgros brothers and their close friend and fellow chef, Paul Bocuse, revolutionized French cooking in the 1960s as champions of nouvelle cuisine, a style of cooking that set the tone in restaurants the world over for more than a decade. Sixty-eight-year-old Pierre is still cooking today, while yet another son, Michel, is adding new energy to the third-generation restaurant and hotel. Pierre's daughter, Anne Marie, is carrying on the tradition at Yves Gravelier in Bordeaux. "When I first started working in Brazil, the European chefs were importing everything, most of it frozen and very expensive," he recalls. "I wondered why. There were wonderful Brazilian products in the market, so I began to work with the fresh, native produce, and I developed a style of tropical French cooking that became my signature." He intended to stay in Brazil for an adventuresome two-year stint, but he became captivated by the country's tropical flavors and climate and has remained there for almost 20 years.
