INDIAN CAKES.Use half a pint of flour, same quantity of corn meal, nearly a pint of cold milk, two eggs, one teaspoonful each of salt and baking powder, a pint of boiling water; put the sugar, salt and meal into a dish, upon which pour the boiling water; after beating thoroughly, add the cold milk. Let this mixture stand until it is perfectly cold, then mix the flour and baking powder and sift into the dish; mix thoroughly, and add the eggs, well beaten. Have the cakes quickly cooked and well browned. FLANNEL CAKES.Dissolve two ounces of butter and one quart of milk, add one teaspoonful of salt, four eggs well beaten, half a teacup of yeast, and flour enough to make a stiff batter. Let it rise over night, and bake on a hot griddle. FRENCH PANCAKES, WITH PRESERVES.Take three-quarters of a pint of good cream, five eggs, two dessertspoonsful of flour, and two of pounded sugar. Use apricot or raspberry jam. Whip the cream to a froth and strain it. Whisk the yolks and whites of five eggs separately and stir them into the flour and sifted white sugar; mix gradually with the frothed cream, and pour it into shallow tins. Put them into a moderate oven for about twenty minutes, and when done place one on the other, with a layer of raspberry or apricot jam between them. The peel of half a lemon, grated, is an improvement.

    Pumpkin Bread Ingredients 8 oz wholemeal flour 3 tsp baking powder 4 oz of vegetable margarine 4 oz of raw cane sugar 1/2 lb cooked pumpkin 2-3 tbs milk 3 oz raisins 1/2 tsp freshly greated nutmeg Method
    Sift the flour and baking powder. Cream the margarine and sugar together in a bowl. Mash the cooked pumpkin until smooth and add the creamed mixture. Fold in the sifted ingredients and moisten with the milk. Finally, stir in the nutmeg and raisins. Spoon the misture into a greased 2 lb loaf tin and bake for 30-45 minutes at 350 degrees f. Grater Cakes Ingredients 1 large coconut 3-4 slices fresh root ginger 1 1/2 pt (850 ml) water 1 lb (450 g) raw cane sugar Method
    Peel and grate the coconut and the peeled fresh ginger. Pour the water into a large heavy based saucepan, add the coconut and ginger and simmer on a low heat until the water is reduced to about 1/2 pt (275 ml). Add the raw cane sugar and once dissolved boil hard stirring continually until the mixture becomes thick and, if a little is dropped into cold water, will harden imediately. Drop spoonfuls of this onto a lightly oiled tray and allow to cool. Molasses and Cornmeal Bread Ingredients 6 oz cornmeal 2 oz wholemeal flour 4 tsp baking powder 1/4 tsp freshly grated nutmeg 1/4 tsp ground cinnamon 4 oz vegetable margarine 2 tbs molasses 2 tbs milk 4 oz grated coconut Method
    Sift the cornmeal, flour, baking powder and spices together in a bowl. Melt the vegetable margarine and molasses in a saucepan and pour on to the dry ingredients. Stir in the milk and grated coconut. Mix Well. Pour the mixture into a greased 2 lb loaf pan. heat the oven to 350 degrees f. and bake the bread for 35 - 40 minutes until well risen.

    The pawpaw is the largest edible fruit that is native to the United States. Pawpaws are indigenous to 26 states in the U.S., in a range extending from northern Florida to southern Ontario and as far west as eastern Nebraska. They have provided delicious and nutritious food for Native Americans, European explorers and settlers, and wild animals. They are still being enjoyed in modern America, chiefly in rural areas. There are 27 varieties ( Table 1 ) currently available from more than 50 commercial nurseries in the U.S. Most enthusiasts agree that the best way to enjoy pawpaws is to eat them raw, outdoors, picked from the tree when they are perfectly ripe. But there are also numerous ways to use them in the kitchen and extend the enjoyment of their tropical flavor beyond the end of the harvest season. The unique flavor of the fruit resembles a blend of various tropical flavors, including banana, pineapple, and mango. The flavor and custard-like texture make pawpaws a good substitute for bananas in almost any recipe. The common names, 'poor man's banana,' 'American custard apple,' and 'Kentucky banana' reflect these qualities.

    Cooking in the south is slowly becoming a lost art. Our ancestor's history can be told in food as well as in numbers and names in some dust covered book. If we have a look at the food prepared in East Tennessee and compare it to the foods of Scotland, it's not hard to see where the roots of the Eastern part of our state were originated. Most of the meals prepared by our ancestors in the "Old South" reflect the history and economics of the region at that time. The south was best known for cotton plantations made famous in books like Gone With The Wind. These did exist but for the large part most rural southerners were sustanance farmers. They made due with what they could grow and what plants and meats they could find in the wild. This was in part because of their financial situation and in part because the areas were so isolated. The art of "Old Southern Cooking" is best summed up as this: A good old southern cook like many of our grandmothers and great grandmothers could go into a kitchen and declare how there is no food in the house. In an hour's time they can have food cooked for thirty people, all of it on the table and all still hot. This is an art form that is rarely duplicated today even with modern conveniences like microwave ovens. This project is hosted by
