Author/s: Gregg Cebrzynski Two words of advice to restaurant owners who hire Asian-Americans: Be patient. It takes a while for members of those ethnic groups, especially first-generation immigrants, to assimilate into American society, and it takes time for restaurateurs to understand the cultural traditions that guide their work lives. And though Asian-Americans are tireless workers, they have an entrepreneurial spirit, a desire to own their own businesses, which in some cases can pose a problem in retaining them for long. That said, they are still a sought-after work force because of their determination to perform at the peak of their abilities. "I want more, but many of them are in business for themselves," says Leeann Chin, founder and board chairman of Minneapolis-based Leeann Chin Inc. "And there's not a big Asian population in Minnesota." The company operates three buffet restaurants and 45 takeout units as Leeann Chinese Cuisine. The chain has 1,500 employees, 10 percent of them Asian-Americans. It recently opened a restaurant in Detroit, and a sign in the window announcing the opening was enough to attract potential Asian-American employees.

FREQUENTLY ASKED QUESTIONS REGARDING "AMERICAN ATTITUDES TOWARD CHINESE AMERICANS AND ASIAN AMERICANS" SURVEY April 2001 Who is the Committee of 100? The Committee of 100 is a non-partisan, national organization, founded in 1989 by a group of Chinese Americans who are leaders in their fields. They recognized the need for an organization that brings an Asian American perspective to U.S. relations with the most populous region in the world and to address the concerns of Americans of Chinese/Asian heritage. The organization has a two-fold mission: encouraging the full participation of Chinese Americans in U.S. society, and improving relations between the U.S. and Greater China. Why was this study done? Over the years, there have been a number of incidents that we felt have reflected and/or exacerbated an anti-Asian sentiment in America. These include the killing of Vincent Chin in Detroit, a Chinese American that was murdered by auto workers who thought he was Japanese, over concerns regarding loss of jobs, the rise of hate crimes, the Wen Ho Lee issue, and campaign finance scandals. We conducted this study to determine and benchmark what Americans' attitudes really are towards Chinese Americans and Asian Americans. This study was conducted in a two-prong approach, using both qualitative and quantitative studies, for thoroughness and analytical rigor. It is a landmark study, never before conducted, and offers us a sound foundation for further analysis and comparisons in the future.

"Asian Americans are eating a more Westernized diet that includes a lot more high calorie foods and animal fat than their ancestors and relatives in Asia ate," he notes. "And they are leading a more sedentary lifestyle. If you superimpose these lifestyle differences on a population that is genetically more likely to develop diabetes, it's not surprising that we are seeing more diabetes in Asian-Americans and Pacific Islanders." Asian-American eating habits vary from eating styles in Asia The diet that Chinese people eat in China, for example, is much different from the stereotypical diet one experiences in a typical Chinese restaurant in the US, Dr. Hsu notes. In China, meals are rice-based with plenty of vegetables and fruit. Meat is treated more like a side dish or for flavoring. Just the opposite occurs in the United States, with most American meals placing the heaviest emphasis on the meat portion of the meal.
