ITALY Hazelnut Dipping Cookies (Hazelnut Biscotti) 2 cups flour 1/2 teaspoon baking powder 1/4 teaspoon baking soda 1/4 teaspoon salt 3 eggs 2/3 cup sugar 1 teaspoon vanilla extract 1/2 teaspoon almond extract 1 cup hazelnuts, toasted 1 egg mixed with 1 tablespoon milk Preheat the oven to 350 degrees F. Grease one large cookie sheet. Sift together the flour, baking powder, soda, and salt. Set aside. In a large bowl, combine the eggs, sugar, vanilla and almond extract. Stir in the flour mixture, then add the hazelnuts. Form the dough into a ball and chill for 1 hour. Divide the dough in half. Form each dough into a log about 12 inches long and place both on cookie sheet. Press down on log to make cookie about 1/2 inch thick. Brush cookies with egg-milk mixture. Bake for about 25 minutes. Cookies should be golden. Remove to a rack and let cool. Reduce oven to 325 degrees F.

Gingerbread Cookies and Citrus Sugar Cookies

Makes 3 dozen
GINGERBREAD COOKIE DOUGH
2 3/4 cups unbleached all purpose flour
1 teaspoon ground ginger
3/4 teaspoon baking soda
1/2 teaspoon ground cinnamon 1/2 teaspoon ground cloves 1/4 cup solid vegetable shortening, room temperature 1/4 cup (1/2 stick) unsalted butter, room temperature 1/2 cup sugar 1/2 cup unsulfured (light) molasses 1 large egg Sift flour, ginger, baking soda, cinnamon and cloves into medium bowl. Using electric mixer, beat shortening and butter in large bowl until light. Add sugar and beat until fluffy. Beat in molasses, then egg. Add dry ingredients. Using spoon, stir until mixture forms dough (dough will be very soft). Divide dough into thirds. Gather each third into ball; flatten into disks. Wrap each disk in plastic and refrigerate until firm, about 4 hours. (Can be prepared 2 days ahead. Keep refrigerated.) CITRUS SUGAR COOKIE DOUGH 2 cups unbleached all purpose flour 1 1/2 teaspoons baking powder 1/4 teaspoon salt

Now, remember that chocolate-chip cookies are supposed to be a nice, relaxing kind of food, so the first thing you'll want to do to make them is to go somewhere where you can kick back and relax. Ecuador is good, so use your frequent-flyer coupons to pick up a round-trip ticket there. The stewardess will hand you a couple of bags of peanuts, but don't eat them, since we're going to need those for the cookies.     2 cups butter 2 cups sugar 2 cups brown sugar 4 eggs 2 tsp vanilla 4 cups flour 5 cups oatmeal 1 tsp salt 2 tsp baking powder 2 tsp baking soda 10-12 ounces each: white, milk, and dark Belgian bulk chocolate 1 cup chunked walnuts 1 cup almonds 1 cup whole macadamias
Cream together butter, and sugars, stir in eggs and vanilla. In a separate bowl, mix flour, oatmeal, salt, baking powder, and baking soda. Mix wet and dry ingredients together and gently stir in 10-12 oz. each of chunked white, milk and dark Belgian chocolate, chunked walnuts, sliced almonds and whole macadamias. Place golf ball sized cookies 2-inches apart on an un-greased cookie sheet and flatten slightly. Bake at 375 for 6-10 minutes. A stand mixer with a paddle or dough hook makes preparation simple. Makes enough cookies for all the Raider haters on your block!
