Museums
Den Hirschsprungske Samling
This little museum bases its collection on the collection of a patron of Danish painters in the 19th century. What is on display is a unique representation of Danish painters, and is a real pearl if you like combining the art of painting with the characteristics of the country you're visiting. I discovered it because it is the closest museum to my appartment - you do not normally notice it, as it is "hidden away" behind the larger State Museum of Art, which in my opinion is somewhat overrated. From the young people that congregate around the bar on weekends to the older, regular clientele, Restaurant Pinden is a true experience in itself. Regular customers are such an integral part that they are sent monthly invitations to free oyster parties. Two weeks ago, at such a party, the main dish was varied, as eight different sorts of mussels were offered to the restaurant's faithful. The most popular item at Restaurant Pinden is the yellow pea soup, which is served with either sausage, pork ribs or a variety of up to four kinds of meat. Fresh, smoked lumpsukker caviar is the special in season currently. Chef Hardie Spartali serves them on french bread with flavored sour cream.

    Aarhus City
    Aarhus is the capital of the Jutland peninsula, and the second largest city in Denmark with 265,000 inhabitants. The University in Aarhus is Denmarks second largest with 16,000 students. Aarhus is both a metropolis and a village: it offers cultural activities, shopping, and commerce, but you can still reach the countryside within twenty minutes. If you can't help it, have a look at the Queen's summer residence, Marselisborg Castle, in the southern part of town. In particular enjoy the park in front of it (Mindeparken) and the easy access to the waterfront and the Marselisborg Marina, with its numerous restaurants and sailing boats.
    Places to eat
    Aarhus has a lot of restaurants in the centre of the city as well as in more outlying places like Marselisborg Marina. The town is full of small ethnic food restaurants most of which are cheap and mainly frequented by students. In general restaurants vary a lot in price, as well as quality. Many of the mid-range restaurants carry a set-menu (tourist menu) which is normally worth its value. We have picked out a list of affordable restaurants where we like to go, along with a couple of more expensive, though attractive ones.

Far-sighted farmers crossed Lincoln, Leicester, Wensdale CotsWold, Hampshire Down and other breeds to form the origin of the Texel breed. This breed quickly spread throughout many countries.     Topfenkolatsche (Cheese Danish)
    Pastry:
    1 package active dry yeast, 1/2 cup warm milk ("blood warm", to be exact!)
    1 3/4 cup bread flour, 1/2 teaspoon salt, 2 tablespoon sugar, 1 egg, 2 tablespoon butter, melted, 1 egg white, lightly beaten, 2 tablespoon ground or chopped almonds
    Filling:
    2 tablespoon butter, soft, 8 oz. cream cheese, 2 eggs, separated, 1/2 cup sugar, grated zest of 1 lemon, 1 tablespoon golden raisins Proof yeast in warm milk. Sift flour and salt together into large bowl. Add sugar and stir in yeast mixture. Beat in egg and butter and work into a dough using a wooden spoon; dough should be smooth and elastic and not stick to sides of bowl. Cover bowl with a cloth and let rise in a warm place until double, about 1 1/2 hours. Turn dough out onto floured surface, punch down, knead until smooth and elastic. Roll out into rectangle about 1/2" thick. Cut into 3" squares. Arrange squares on greased baking sheets about 1" apart.
    For filling:
    Combine butter, cheese, egg yolks, sugar, zest and beat (or process in machine) until smooth. Beat egg whites until stiff and fold into mixture. Stir in raisins.
