Secrets Of Fat-Free Chinese Cooking

While I was recuperating, I tried other foods touted by a teacher of healthy Chinese-style cooking, one with experience at the Boulder Heart Institute. Most of her more than 130 recipes, the cover says, have less than two grams of fat per serving. Selecting what to prepare in any cookbook can be daunting. In this one, after my very restricted diet, I went at it with relish, I was, after all, looking for healthy secrets, selecting them in random fashion. After all, I did not want my choices to have preconceived notions. In the six I tried, two were great, two tasted of too much Mrs. Dash (a touted healthy salt substitute), and two were out-and-out losers. The Long-life Noodles in Vegetable Sauce won my heart; its excellent sauce combo of garlic, cucumber, scallions, chili peppers, black pepper, and some five-spice powder was just terrific. Ditto the Steamed Beef and Vegetable Dumplings, whose mix of hot mustard, chili paste, lemon juice and sesame oil was a perfect foil for the ground beef (I opted for two cleavers and minced mine, Chinese style) and the carrots, scallions, and onions. One secret or trick in this recipe was the carrot slice placed under each dumpling in the steamer. That's clever, as the dumplings come out garnished and ready, and the steamer is easier to clean.

Insulin Resistance and Memory A short research study earlier this year missed media attention, but is newsworthy. Scientists at NYU School of Medicine found that elderly people who were NOT overweight or diabetic but who were glucose intolerant had poorer mental performance, more memory impairment, and atrophy of the hippocampuswhich is the part of the brain that assists with short-term memory. What does this mean? These people were resistant to insulin, and insulin resistance syndrome is a precursor to diabetes. So blood sugar stays in the blood stream longer, and fat is deposited around the waist more easily. What can you do?

By law, foods containing less than half a gram of fat per serving are considered fat-free. But when choosing foods advertised as fat-free, it's important to consider the standard serving size when it's listed on food labels. Food amounts formerly listed as fat-free, such as a teaspoon of fat-free salad dressing, will be shown to contain a significant percentage of fat calories when eaten in a typical amount. And most of the fat-free foods in the supermarket don't come with labels. That's because they are found in the fresh produce department. Nearly all fruits and vegetables, with the exception of avocados, are fat-free or nearly so at normal serving sizes. And even fresh foods will soon have their nutrition information posted, according to U.S. labeling laws. As for other fat-free foods, a one-half-cup serving of most legumes, including beans, peas and lentils, whether dried or fresh, is fat-free. Skim milk and any product made from skim milk, such as nonfat yogurt and skim milk cheese, are also fat-free. Some tasty fat-free snacks include the following:

My book is ALL NATURAL
My cooking is all natural because I use only fruits and fruit juices to sweeten and no artificial sweeteners. I also us no chemical tasting salt substitutes. To replace salt I use fruit juices, wine, pepper, herbs and spices. To replace fats I use no stick pans, juices, stocks, wine, and watery vegetables and fruits. The result is great. It's not hard to do once you get on to it.

Fat-Free Cooking Methods The way you cook your food can make a massive difference to it's fat content. Use these tips for fat-free cooking and you're on your way! Use Heavy-based or good quality cookware
and you will find that the amount of fat needed for cooking foods can be kept to a minimum. If you do need a little fat for cooking choose an oil which is high in unsaturates such as corn, sunflower, olive or rapeseed oil and use as little as possible. Use Good Quality Bakeware which doesn't need greasing before use to make low fat cakes. Alternatively use non-stick baking paper and only lightly grease before lining Use Non-stick Coated Fabric Sheet which is re-usable and non-stick. It can be cut to size and used to line cake tins, baking sheets or frying pans. Heat resistant up to 290C/550C and microwave safe, it will last for up to 5 years. Don't Add Fat When Grilling If you absolutely must spray with a small amount of olive or corn oil.

Rating: Summary: Awesome recipes! Comment: I've had this book for nearly ten years. The reason I'm looking at it again online is because I've used it to pieces, literally! I need a new one because mine is faded and falling apart. My family loves the recipes. Many are traditional like lasagne and chicken enchiladas and many are newer, more creative ideas. Honestly, we don't cook the recipes as fat-free. We live in Germany and fat-free food doesn't exist here so we cook with normal cheese, sour cream, tomato sauce, etc. and they taste wonderful. I use this book more than any of the others. There's a vegetarian section, side dishes, etc. They all taste great. You can't go wrong with this cookbook because it has a nice twist from the traditional Betty Crocker recipes.

Rating: Summary: Overall Good Food Even With Reduced Fat Comment: Terms like low-fat and fat-free often bring to mind reduced flavors and poor imitations. Fortunately, this is not the case with this cookbook. There are recipes from appetizers all the way to desserts, and not only do they have more traditional recipes we're all familiar with, but there are less common ones, to make sure you've got variety to choose from. Honestly, they are going to be different from full-fat versions of the recipes, and in a few cases, such as the Fettucine Alfredo, the healthier version really doesn't cut it - but for every one of those recipes, there are plenty of delicious ones.

The trouble is that many pumpkin-based recipes needlessly include substantial amounts of fat in the form of milk, cream, or eggs.
