Every summer Diane Kochilas escapes to her ancestral village on the island of Ikaria , where she runs a small restaurant called Villa Thanassi with her husband, artist Vassilis Stenos. The island, a wing-shaped parcel of land named for the felled Ikarus of Greek mythology, is in the eastern Aegean, between cosmopolitan Mykonos and touristy Samos. It is a world apart, though. Ikaria is untrammeled and pristine. The village, Christos, where she has her cooking school, is on the north side of the island, nestled among pine forests overlooking the sea. Life here still moves with the unhurried, timeless rhythms of all agrarian communities. It is the perfect place to come for a truly holistic vacation, to forget about the world and immerse yourself in nature. Starting in the summer of 2003, Diane will be offering a variety of cooking classes. The classes take place in a hundred-year-old, traditional village home, which Vassilis renovated. Villa Thanassi is surrounded by the garden he plants every year, a few olive trees and much wild nature. As a result, most of the vegetables cooked in each class are organic, and guests are encouraged to help out (optional, of course!) in the extensive vegetable garden. The week begins with an introduction to Greek Food and Wine and a Welcome Dinner on Sunday evening.

Diane Kochilas from The Glorious Greek Kitchen , England Diane Kochilas is one of the world's foremost authorities on Greek cuisine. She is an American of Greek descent, a born-and-bred New Yorker, but she has lived in Greece since the early 1990s. Now, she divides her time between three places: New York City, Athens, and Ikaria, a beautiful, peaceful island in the eastern Aegean where she runs a small restaurant and cooking school each summer at Villa Thanassi T he restaurant is run by Diane and her husband, artist Vassilis Stenos, and is housed in a beautiful old villa overlooking the sea and the mountain hamlet of Christos. During the rest of the year, Diane can be seen as a consulting chef at Diatiritaio, a restaurant serving high-end Greek cuisine in downtown Athens or organizing special events at Milos in New York. Diane has helped organize cheese tastings, wine tastings, olive oil tastings and kakavia festivals at the famed New York restaurant. Sometime in the early 1980s, I went with a friend to a Thai restaurant in Boston. There was a line extending out its door and everyone else in that line was a college student. Each generation has one or two particular cuisines inextricably connected to its culinary coming of age, a foreign food that is both wonderfully exotic and cheap. Back in the late 1960s, the dishes we stood in line for were garlicky skorthalia souvlakia , baklava, moussaka, and spanakopitta . At home, although I did make some of these dishes skewered lamb, a basic moussaka, the occasional spanakopitta worked up from frozen filo dough and frozen spinachnothing ever really took hold. And as the Acropolis gave way first to the Szechuan Palace and then to the Bangkok House, Greek cooking pretty much left my life. Why? It wasn't for a lack of cookbooks. I acquired three, starting with The Art of Greek Cooking , published in the late 1960s by the Women of St. Paul's Greek Orthodox Church, followed in 1974 by both Theonie Mark's Greek Islands Cooking (Boston: Little, Brown) and Vilma Liacouras Chantiles' noteworthy

  • Season the chicken thighs with salt and pepper.
  • Add the chicken thighs to the pan and cook until they too have taken on a golden brown colour. Return the onions to the pan and add the bay leaves and the thyme leaves. Add enough water to barely cover the chicken.
  • Cover the pan and leave to simmer for 30-40 minutes, or until the chicken is cooked. Remove the chicken with a straining spoon and keep warm.

I vary my menu with classic American, Chinese, Italian and Greek dishes. Logically enough, after living in Greece for 19 years, the food that reaches the table is more often than not standard Greek fare.
