In a colossal undertaking to publish the complete works of the ancient Greek philologists, Kaktos Publications recently completed the Athenian Deipnosofistes* edition. It is composed of 15 elegantly bound and easy to use volumes which, besides having the ancient Greek text, also has excellent translations of the text and valuable comments about the text. The Deipnosofistes, besides being a priceless treasure house of mental scenes of antiquity, is perhaps the oldest and most prominent written document depicting what the relevant issues were at that time in history. This massive work is particularly valuable for those interested in ancient Greek foods (what they ate and how they cooked food). It is a factual gastronomic encyclopedia with a large guide to the most suitable ingredients used in cooking and how to prepare many different dishes. Detailed references are made about how a symposium should be organized, what kind of music to be played was suitable, what utensils should be used etc. Athenaios, the philologist, recorded the dialogues between dinner guests during the three symposiums. He wrote about the philosophical stream of thought at the time by compiling the ideas, words and verses of prominent men who were at the symposiums. These fragments of thoughts and ideas give us a kaleidoscopic look at the fascinating picture of the time he lived in. This week I would like to take you to Greece, because I had such a good time there with my family. More than any cuisine in Europe, Greek food and wine are linked to a way of life that is at once indigenous and timeless.
The sea of olive trees that extends over vast areas of the country is said to have belonged to the god Apollo. The legend of Dionysus, god of wine, is traced from the earliest times: certain vineyards were already famous for their wine in the ninth century B.C.
Olive oil, honey, nuts and wine are the basis of a cooking style with roots several thousand years old. Pungent wild herbs and rose or orange flower water are used to produce a variety of sticky cakes, pastries and confections today, as they have been for hundreds of years.
Greek meals are never rushed; one is led effortlessly into them. Orektika, appetizers that precede the meal, set the pace of an evening. An hour, two hours, even longer can be spent nibbling olives and nuts, taramosalate, hummus, tzatziki, cold stuffed dolmathes, bits of fried fish and much more.

The first course of a Greek meal at my home: soup and appetizers. All recipes on this site came from my mom's kitchen. Some were given to her from family or friends, others she picked up from cookbooks and tweaked to her taste, and so on. She scribbled some of them on pieces of paper, or annotated photocopies of cookbook pages; but over the years, she had memorized them all and her memory was the only place they could be found. One fine day, I left home to study engineering in college, a few thousand miles away from home. Soon I realized that my mom's cooking was not to be discovered in even the best Greek restaurants in the US; and following standard cookbook recipes didn't produce the result I remembered from childhood. So I asked her for her recipes, and I got them all. But they were the kind of recipes meant to be read by other cooks. I was a kitchen ignoramus and an engineer too:

Serving Size : 6
1/4 cup all-purpose flour
salt
black pepper
1/4 cup olive oil
1 whole bay leaf
1/4 teaspoon ground thyme
1/4 teaspoon dried rosemary
1 clove garlic
2 cups chicken stock
1 cup white wine 1 can tomato sauce 2 dozen small white onions blanched and peeled 1/2 cup black olives pitted Season flour with salt and pepper and dredge lamb cubes in it. Heat olive oil in large soup kettle over medium high heat. Brown lamb cubes in oil. Sprinkle herbs and garlic over lamb and add stock, wine, and tomato sauce. Season with additional salt and pepper to taste. Simmer over medium heat for 1-1/2 hours. Add blanched onions and olives. Simmer 1/2 hour longer. GREEK SHRIMP WITH FETA CHEESE
2 lbs (1 Kg) shrimp, peeled and deveined
2 Tbs (30 ml) lemon juice
2 Tbs (30 ml) olive oil
1/2 cup (125 ml) chopped onion
2 scallions, finely chopped (green and white parts)
2 cloves garlic, finely chopped
1 cup (250 ml) tomato puree or canned tomato sauce
1/2 cup (125 ml) dry white wine or water
1 Tbs (15 ml) butter
1/4 cup (60 ml) ouzo or brandy (optional)
