Over-Done or Half-Baked?

A few years ago a well-meaning consumer had the temerity to take some of Hawaii's new fusion chefs to task in one of our daily newspaper's editorial pages. "Pacific Rim food is over-done," he opined. "It is a ridiculous experiment gone awry... bizarre... complicated... frou frou!" And he wasn't so kind between the dots! Although I've worked with, and actively supported, pretty much the best of Hawaii's new chefs, I can't say that I found these comments particularly hurtful. For one thing, sometimes it's true the new island cooking can be bizarre. For another, if this is the kind of cooking that captures the fancy of island visitors and locals alike - not to mention the lion's share of international press - it would be foolish for even the least talented chefs and restaurateurs not to incorporate these new ideas. The ironic thing, as most food culturists observe, is that there is virtually no cuisine in this world that does not represent some kind of fusion. The Italian cooking that we know today has evolved at an incredible pace since the 19th century, influenced by foodstuffs and techniques borrowed from all over the Mediterranean, and from faraway as China and America. The various cuisines of India, China, Thailand, Vietnam, and throughout Asia result from people utilizing everything at their disposal, including all they've absorbed from neighboring countries and cultures.

Ono Korean Chicken
5 lbs chicken drummetts
1 tsp. salt (optional)
1/2 cup shoyu
3/4 cup sugar
1 clove garlic, finely minced
1 skinned chili pepper or flakes (optional)
1 Tablespoon sesame seeds
1 Tablespoon sesame seed oil

Imu Cookery 101
Join the workers of "The Old Lahaina Luau" as they build an imu and cook a pig for tonights luau. The Old Lahaina Luau offers a luau, seven days a week, at 1271 Front St.,Lahaina, Maui, Hi. 96761. It is located on the water across the street from the Cannery Shopping Center. If you are ever in Lahaina and want to enjoy a luau, this is a good one to try out. Book early as they sell out often. They were honored by the Hawaii Visitors and Convention Bureau in 1999 with a "Keep It Hawaii" Kahili Award in the show category. The award program acknowledges achievements in preserving Hawaiian culture. When you see our "looking eyes" graphic, just click on it for a larger view of the near by picture. Feel free to download any pictures or text you may want to use for school projects, charity events or any other not for profit activity. All other rights are reserved. STEP 1. There is a lot of work to do before you ever get to the imu. This load of banana stalks (in the bottom of the wheel barrel) and koa wood, is what's required for a 125 lb. pig. STEP 2.

STEP 9. This is five minutes work for a strong arm! Notice the sizes, most seem to be quartered or halved while some are splittered down to a finer size. STEP 10. While the fire is working, the leaves must be washed and moistened in case they have dried out since they were cut. STEP 11. Canvas tarps or some other heavy cloth are essential items for any good imu. The early Polynesians didn't have these items, so if you want to be "authentic" be prepared to dig a 5 foot deep hole for the imu. The heavy cloth replaces 3' to 4' of sand. Make sure the cloth is washed, as it will be clearly visible during the unvailing at the feast, and make sure it is well soaked so it can help steam the pig. You don't want it catching fire, "awe!" Notice the surface area, you may need three or four tarps if your's are smaller. STEP 12. You should be ready to "put it all together" by now and the fire should be getting the rocks just right. STEP 13.

    • BALONGKAUE - (pronounced ball long coo) is a cooking type, which grows about 12 ft. tall. The fruit has a bluish/green outer appearance, with white flesh. Is a very sturdy and attractive plant that can be eaten out of hand when very ripe. CARDABA - A Philippine cooking variety that is a truly an attractive plant with a bluish hue to the fruit and very white pulp. The fruit is stubby and irregular in shape but can get quite large. Height 10-12 ft. ELE ELE - A Hawaiian cooking variety that is known for its very dark pseudostem. Sometimes called the Hawaiian Black, it gets a purplish hue, especially in more acid volcanic type soil. Full sized fruit. Grows about 14 ft. tall. HUA MOA - A Polynesian cooking banana that is short and stubby but packed with flavor. These make wonderful tostones and maduros as well as other banana recipes. The large full leaves and fat, rounded fruit make this a great looking plant. Height about 12 ft. MAIA MAOLI - This 12-14 ft. tall plant of the Polynesian cooking variety has delicious flavor and statuesque elegance. It is mostly green with slight red colors in the pseudostem giving serious competition to the other cooking varieties. MONTHAN - A cooking type from South India. Similar to the Bluggoe or Orinoco in size and versatility. Height about 10-12 ft.
