The man grinned at me from the lounge at Kanaka's as he expertly strummed a ukulele. He looked like a real kamaaina, an Island local. I listened to his cheerful notes and took in the dining room. Table coverings with Polynesian tapa cloth designs. Potted tropical plants like my mother once had in a garden. Prints and photographs of beaches where I learned to surf. I smiled at the memories of sun and sand and my hapless attempts to master the instrument the man played so well. For a moment, I was a boy again in Hawai'i, a kanaka . "Kanaka" means man, person, group or humanity in general. It's an inclusive sort of word, the perfect name for a restaurant that serves the authentic food of Hawai'i, a state whose people speak more than 50 languages and dialects. One test of skilled Hawaiian cooking is the quality of fish courses. Kanaka's chef superbly prepared the ocean's bounty. Cubes of ahi seared in a forceful soy sauce ($8.95) were so tender they were like tiny pillows on the tongue. Mahi mahi broiled over coals and brushed with a garlic-butter huli sauce ($14.95) was silky without losing firmness.

This book does an excellent job of answering the question: "What is Hawaiian food?" As anyone who has visited the Aloha state knows, Hawaii is truly a melting pot, and Hawaiian cuisine is a harmonious blending of all these diverse influences. Shirley Tong Parola first introduced mainlanders to the Hawaiian food she grew up with when she set up a hibachi stand outside a Nashville theatre where her husband was working. Later, she teamed up with daughter Lisa Parola Gaynier to open the Diamond Head Cafe in Ann Arbor, Michigan. This book is a way of both thanking loyal customers and sharing their love of Hawaiian food with other readers. One tip: don't skip the introductory sections. The book is spiced with interesting tidbits, such as the ethnic makeup of the state to a quick lesson in speaking Hawaiian (a is "ah" and i is "ee"). One of the more interesting pieces of trivia I learned was that Waikiki actually means "dirty water" - hard to believe if you've ever had the pleasure of taking a barefoot stroll along its soft white sandy beaches. In addition, the authors answer common questions about Hawaiian food, such as what do native Hawaiians eat, and why Spam is so popular.

The scenery of Hawaii has gone through a dazzling transformation over the past decade and a Texas gal is behind it all. No, she didn't wave a magic wand over the landscape. Hawaii remains a tropical Eden, rimmed by miles of ivory beaches and crystal blue waters, and dotted with towering volcanos. She helped give birth to the country's hot new food scene: Hawaiian regional cuisine. Hers is a love story. Gannon followed the love of her life from Dallas to Maui in the 1980s and her beloved catering business blossomed in this garden paradise. Her heartfelt cooking found a home at the Hali'imaile General Store, a historic company store in the middle of a thousand-acre pineapple plantation on the slopes of Mount Haleakala. There, she envisioned setting up headquarters for her catering business with a simple specialty takeout deli counter, but her fans had other ideas. There are many things about Hawaii that capture our imagination, including: beaches, volcanoes, palm trees and ocean waves, but until recently food was just an afterthought. Only a decade or so ago, most major restaurants in Hawaii served what chefs thought the tourists would want to eat. Not wanting to offend the sensibilities of the islands' major source of income, typical "mainland" fare was the order of the day. The thought that the average New York, Iowa or San Francisco bumpkin would want to nibble on local chow was simply not considered. Luckily for everyone, a few intrepid kitchen maestros decided enough was enough. It was time to share the amazing local produce, seafood, and spices with the inbound masses. Hawaii is fortunate to have the influences of several major world cuisines to draw from.
