  • 1 lb boneless Elk or Deer round steak
  • 1/4 cup flour
  • 2 T margarine or butter
  • 1/2 cup boiling water
  • 1 tsp salt
  • 2 or 3 green peppers
  • 1/2 cup pineapple chunks
Preparation - Cut steak into 1" cubes and dredge with flour. Brown meat cubes on all sides in hot fat. Add water and salt. Simmer gently until meat is tender. Clean green peppers and cut into 1" squares. Boil 10 minutes and drain. Add pepper squares and pneapple chunks to browned meat.
    Sauce
  • 2 1/2 T. cornstarch
  • 1/2 cup pineapple juice
  • 1/4 cup vinegar
  • 1/4 cup sugar
  • 1 1/2 T. soy sauce
Preparation - Combine cornstarch, pineapple juice, vinegar, sugar and soy sauce and cook until sauce is clear and thick. Pour sauce over meat mixture and simmer 5 minutes. Serve over Chinese noodles or cooked rice. This is one of 90 venison recipes from The Recipe Source,

For the Luau, we cooked a pig the traditional style: in an imu pit. Here are a couple of photos to show how this is done. First of all, you need a pit in the ground. Sounds easy, butit isn't always so easy in Hawaii, because the ground is - well - lava (which means: rock). That is: unless you are someplace with a thick layer of topsoil. Then you need wood to burn and a large number of nice, round stones. These lava rocks come from the beach. One group of folks collected them and piled them up near the road. The other group transported them to BellyAcres, whenever they came by. The next ingredient you need is chopped up banana trees (they are not trees, I know, I just cannot think of the right word right now so give me a break or send me email with the correct word). And you need the whole thing! Leaves, stems and such. An imu pit is essentially a steam cooker. And you need some way to generate steam. That's where the banana trees come in see further below.

Banana Pie, Hawaiian Style Presented by Becky Low on May 04, 1998
"Celebrate National Pacific American Heritage Month with the taste of Hawaii. This baked pie may be served warm or cold. Pie serves 8 " Ingredients:

  • 4 cups bananas, (on the green side)
  • 1/2 cup pineapple juice
  • 1/2 cup sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 pastry crust, for 2 crust pie
  • egg Method: Peel and slice bananas. Pour juice over bananas and allow to set for 30 minutes. Pour mixture into pastry crust lined pie plate. Sprinkle with sugar, cinnamon, and nutmeg. Dampen top edge of pie crust with water. Place second crust on top, pressing edges together to seal. Remove excess crust, flute edge, cut vent in top crust, brush with beaten egg. Bake at 400 degrees for 45 minutes to 1 hour, or until golden brown.     Hawaiian Dream Cookies Presented by Sharon Kofford on August 11, 1999
    Ingredients:

  • 2 2/3 cups toasted, flaked coconut (7 oz package)
  • 1 cup slivered, toasted almonds
  • 1/2 cup butter or margarine
  • 3/4 cup sugar
  • 1/2 cup brown sugar
  • 1 tsp. vanilla
  • 1 tsp. coconut extract
  • 1 egg
  • 1 2/3 cups flour
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1/4 cup cornstarch Method: 1. The coconut and almonds can be toasted on a cookie sheet at 350 degrees, 4-6 minutes or toast in the microwave. Watch carefully. 2. Cream margarine/butter and sugars together until light. Add flavorings. Beat in egg. 3. Combine dry ingredients. Stir into creamed mixture using a spoon rather than a mixer. Add coconut and almonds. Add water one tablespoon at a time until the mixture holds together. 4. Shape into 1 inch balls, place on lightly greased cookie sheet, and bake at 350 degrees for about 15 minutes or until lightly browned. Cool slightly before removing to rack.     Welcome to barbecuing and grilling in Hawaii. This week, in a series of features aimed at U.S. regional grilling, we are going to take a look at the wonders of Hawaii. Now before you turn away, thinking that Hawaii isn't exactly known for barbecue, let me point out a few things. First, Hawaii is home to the largest privately owned cattle ranch in America. Second, Hawaii is surrounded by a wide diversity of Seafood. Third, Luau. What developed from all this is known as "Local Food". Local Food is an East-West Pacific mix created in the 1920s and 30s by lunch wagon cooks and small stores and restaurants. Typical Local Food meals are lunch plates which consist of rice and meat covered in gravy, a raw fish dish called Poke served with either salt and seaweed or chili peppers, sesame oil or soy sauce. Also popular is Teriyaki, which is used to prepare all kinds of meat. As you can see, Hawaiian food is a unique cuisine created from a very diversified background. It is common to see restaurants that serve American, Chinese, Korean and Local Food. And next door you'll find a place that serves Barbeque. A particular favorite in the Islands is grilled fish. What kind of fish you ask? How about, Aku, Ahi and Albacore (Tuna); Marlins; Opakapaka, Kalekale, Onaga, Uku and Taape (Snappers); Hapuu (Grouper); Ulua, Akule and Opelu (Jacks); Ono; Squid and Octopus; as well as all the shellfish like Opihi, Wana (Sea Urchins), Black Crab, Lobsters, Shrimp and Prawns.

      jars great northern beans ( 48 oz. each) cups chopped onion lbs. dark brown sugar lbs. cubed fully cooked ham bottle ketchup (28 oz.) can crushed pineapple, drained (20 oz.) cup prepared mustard cup vinegar
    Combine all ingredients; mix well. Divide among 4 greased 13x9x2" baking pans. Cover tightly; bake at 350°F for 1½ hours. Uncover and bake 20-30 minutes more. Serves 80-100
