Hawaiian Yellow Fin Tuna Tataki
Ingredients:
2 lb. Tuna
1 lb. lettuce
4 Oba leaves
Marinade Sauce:
8 oz. Vinegar
8 oz. Soy Sauce
2 oz. Sake
4 oz. Mirin (sweet sake)
1 cup bonito flake 1 coffee spoon ginger (chopped) Instructions: Cut tuna in half and sprinkle with salt and pepper. Put tuna in a refrigerator for 20-30 minutes. Combine all the marinade sauce ingredients in a saucepan and boil. Once the sauce boils, set the sauce aside to cool it off. Add finely minced ginger and garlic. Remove the tuna from the refrigerator and grill it until the surface changes to white color. Then quickly put the tuna in a ice water to cool it then pat dry. Marinate the tuna in a marinade sauce for about an hour. Serve lettuce, onion slices and Kaiware radish on a center of the plate with tuna slices around it. Pour the marinade sauce over. Description of Picture COOKING HAWAIIAN FOOD To build a earth oven or Imu you will have to put kindling wood in the middle of a hollow, larger peices of wood building around and over the kindling. Then a layer of stones would be aranged over the wood and the kindling lighted. A length of a bamboo stick is a blower to direct the breath in fanning the fire into flame. The process of cooking in the Imu or earth oven then you are cooking it in a Kalua (a hole). Sweet Potato- The sweet Potato is called sweet Potato because it is sweet. The sweet Potato is grown on the Kula lands which is unsuitible for Taro (Kalo). The Hawaiian name for Sweet Potato is 'Uala or 'Uwala. The scientific name for Sweet Potato is Ipomoea Batatas. The Sweet Potato has a purple kind of color in the inside of the Sweet Potato. The Sweet Potato would take about two hours to cook in the earth oven or Imu. Taro- The Taro (Kalo) would probally take about three or four hours to cook, in order to break down the calcium chloride crystals which could cause irritation of the mouth and tongue if the cooking periods is not long enough. Pig- The Pig is very good for food. The Hawaiian name for the Pig is Pua'a. The Pig is good when it is roasted and cooked. It is also good at a luau. The Pigs has tracks that looks like a deer. boards sweepstakes site shops You Are Here: HOME Holiday/Seasonal Cooking Articles Susan is BellaOnline's Holiday/Seasonal Cooking Host Hawaiian Cookies 1/3 cup sugar 1/2 cup packed brown sugar 1/3 cup packed flaked coconut 2/3 cup chopped macadamia nuts 2/3 cup chopped dates 2 cups flour mixed with 1 tsp. baking soda and 1 tsp. baking powder Layer ingredients in jar in order given.  Press each layer firmly in place before adding next ingredient. Recipe to attach to jar: Empty cookie mix in large mixing bowl; stir to combine.  Add 3/4 cup softened butter, 2 eggs slightly beaten and 1 tsp. vanilla; mix until completely blended.  Roll dough into walnut-sized balls.  Place 2 inches apart on a lightly greased cookie sheet. Press cookie down slightly with the heel of your hand.  Bake at 350º for 11 to 13 minutes or until edges are lightly browned. Cool 5 minutes on baking sheet. Remove to wire racks to cool completely.  Yield:  2-1/2 dozen. Hawaiian Pineapple Candy Ingredients
1 cup granulated sugar
1/2 cup brown sugar 1/4 cup milk or cream 1/2 cup crushed pineapple, not drained 1 tbsp butter 1 tsp vanilla 1/2 cup pecans Instructions Cook sugars, milk and pineapple until mixture forms a soft ball when a little is dropped in cold water. Remove from fire; add butter, vanilla, nuts. Beat until creamy, drop by spoonfuls onto waxed paper. Sometimes it helps to cook just a hair beyond the soft ball stage to get the candy to harden. The beating is the big secret. The color will change as the candy gets stiff. If it is too stiff to drop from the spoon, add a spoonful of hot water as needed, being sure to beat after every addition of water.
