HOLIDAY COOKING Fancy dips, tempting hors d'oeuvres, inviting canapes, delightful desserts, the Thanksgiving turkeythe holidays are filled with scrumptious culinary delights. Don't ruin the holidays, though, with food poisoning. Avoid Foodborne Illness During the holidays or anytime, refrain from eating certain foods. Such foods as raw oysters; egg drinks, mousse or bread pudding, unless made with pasteurized eggs or an egg substitute; soft-boiled eggs; steak tartare; and rare or medium hamburger can harbor bacteria that cause food poisoning. It is particularly important that young children, the elderly, pregnant women and those who are ill or whose immune systems are compromised not eat raw or undercooked animal products or raw oysters unless they have consulted their physicians. Most Food Poisonings Are Preventable Follow two very important rules: Keep hot food hot and cold food cold. And keep everything in the kitchen clean. Cooking food to a temperature of at least 165 degrees Fahrenheit (F) kills most bacteria that cause food poisoning. Keep cooked foods that are not served immediately at a holding temperature between 140 degrees and 165 degrees F. Do not leave food unrefrigerated longer than two hours or the chances of bacterial growth increase. Most bacteria get into food through careless handling. Be sure to follow these simple steps:

The twinkling candles in the menorah shed a lovely light on the elegantly set table. Children's faces are a study in joyful anticipation of nightly, small gifts. Aromas from the kitchen predict an especially appealing meal. This year, the first night of Hanukkah, one of the prettiest and most festive Jewish holidays is December 21, 2000. Hanukkah is a time for family and friends to gather around the table to commemorate the rededication of the temple of Jerusalem by lighting a candle each of eight nights. Eating foods that are cooked in oil, such as the much beloved potato latke, is also very much a part of the celebration. This represents the small measure of oil the Jews had centuries ago when defending the Temple. Miraculously the oil lasted for eight days. I've centered this menu around potato latkes, the culinary symbol of Hanukkah, and have tried to balance it with dishes that use little or no oil. This relieves one of some guilt in taking an extra plateful of the delicious latkes. Begin with a hearty bowl of Mushroom Barley Soup perfect for a chilly evening. Accompany the crispy latkes with a colorfully seasonal and healthy Spinach and Tangerine Salad. Let guests help themselves to toppings of tart apple sauce or sour cream for the latkes. Finish with an ethereal, low-fat almond ginger torte for the adults and Hanukkah cookie cut outs (dreidels, menorahs) for the kids.

'Tis the season of excesses: lots of hustle and bustle, numerous social events, shop-till-you-drop gift buying excursions, time and money shortages, travel and endless occasions for food and drink. It's an enjoyable, yet stressful time of year, especially if holiday foods don't fit into a modified diet for diabetes. "We all need a plan to get through the holidays, but it's even more important for those with such a serious medical condition as diabetes," said Diane Sanders, nutrition education extension assistant at Kansas State University. "The basic plan for controlling diabetes involves balancing food, activity and medication." According to Sanders, food is a major part of the balancing act. Meal planning is essential for good diabetic control since food, activity and medication work together to control blood sugar levels. The meal plan that your diabetes educator and dietitian work out for you will help you to know what to eat, how much to eat and when to eat. Fitting holiday foods and eating times into your normal schedule is very important. Try to eat holiday meals within one hour of regular meal times. The first step is to be sure that you know your diet prescription well. If not, carry a small pocket reference. Consult it when you don't know which offerings from the buffet table will fit your needs best. It is easier to bypass the high-fat, high-sugar treats now because healthy eating is more popular and more people are watching what they eat. Remember that portion size is as important as food selection.
