    USDA Teaches Turkey Basics for Safe Holiday Cooking
    WASHINGTON, Nov. 8, 2001 - A large crowd to cook for, a big bird to roast, and to many cooks in the kitchen can lead to foodborne illness from holiday dining. But handling and cooking a turkey needn’t be an illness waiting to happen. "Following basic USDA recommendations will help ensure safe, confident cooking and prevent foodborne illness for diners," says Susan Conley, director of Food Safety Education Staff for the U.S. Department of Agriculture. "We get a lot of calls to the USDA Meat & Poultry Hotline around the holidays because people are preparing turkeys and other meats sometimes for the first time. And often they’re preparing food for larger numbers of folks, so we give them the basics." A whole turkey is a large bird to handle; however, the basics of thawing, handling, and roasting it to a safe temperature are easy things to do.
    Safe Thawing
    For thawing in cold water, allow about 30 minutes per pound. Be sure the turkey is in leak-proof packaging and submerge it in cold tap water. Change the water every 30 minutes until the turkey thaws.

    USDA Says Use "Thermy™" For Holiday Cooking Safety
    WASHINGTON, Nov. 2, 2000 No matter how you slice it, holiday meat will be done safely and turn out better if cooks use a food thermometer. To educate cooks on food safety and encourage the use of a food thermometer, USDA's Food Safety and Inspection Service (FSIS) created "Thermy™," a new food safety messenger. Thermy™ is a characterization of a digital food thermometer. Using a food thermometer is the only way to tell if food has reached a high enough temperature to destroy harmful bacteria and that it is the desired doneness. Unfortunately not all cooks use a food thermometer and thousands of Americans could fall victim to foodborne illnesses this holiday season after consuming food that isn’t cooked to a safe temperature. Susan Conley, director of Food Safety Education for FSIS, says, "We're using Thermy™ to encourage consumers to use food thermometers throughout the year, but it's very important at holiday time. Thermy™'s message is, ‘It's safe to bite when the temperature's right.’ That means if a food has reached a high enough temperature to kill harmful bacteria, it is safe to eat. It will also be a tastier, more juicy product because it’s not overcooked!"

    • Chicken broth and fresh herbs are a delicious butter/margarine substitute for vegetables. Toss the vegetables with sauce made from chicken broth and fresh herbs such as dill, basil, oregano, thyme, chives, lemon grass and rosemary. Just one of these fresh herbs can make a great difference in the finished dish. Add a little marmalade to the broth and you add sweetness and shine to your vegetables.
      Sweeten winter squash with apple juice concentrate, light syrup, all fruit preserves or maple syrup. Season with cinnamon, cloves and nutmeg.

  • Before you cook your first holiday recipe, remove kitchen clutter to make as much room as you can for holiday preparations. Cast a cold, hard eye on those kitchen counters. Then there are those of us who enjoy preparing the season's gustatory delights, yet don't plan on spending a major portion of the holidays over a hot stove. With low desert temperatures becoming positively comfortable, I'd much rather be outside hiking, biking and camping instead of slaving for hours over complicated menu items, fancy sauces and greasy dishes, so let's keep the holiday menu simple and traditional. If you have a ham, turkey or roast, there's no great mystery to baking it so it's tender and moist on serving. Most important is selection of the meat/cut in the first place. Then, follow any recipe book or even the on the packaging for baking. Supplement your traditional main course with these simple, tasty recipes that will add a Southwestern flair to your holiday season.

How can I be efficient and still include the children? Since the children will be home from school for the holidays, rather than trying to find a way to keep them occupied so you can cook, make them your assistants and let each child contribute his own special dish. Here's how: Parents will be surprised how much "pressure" is lifted as you invite your budding chefs to help with turkey stuffing, cranberry dishes, potato recipes and more. It's a lot more fun to cook with company than to be enslaved by a huge meal all alone. You can ask each child to name their recipe after themselves. Encourage them to make a few changes to the standard recipe to personalize it as "theirs."
