    The Indonesian islands have been conquered and populated in turn by the Chinese, Portuguese, Dutch, Indians and English. Consequently like their way of life and tradition, their cuisine too reflects the rich history and the diverse cultures of their occupants.
    Indonesian food bears a strong resemblance to both Thai and Indian food, and simplistically, it can be said to be Indianised Thai food. In most Indonesian dishes we find a delightful blend of typical Indian spices like turmeric, root ginger, cumin and chillies with herbs and spices of Thai cuisine, like lemon grass, cilantro, coconut milk and shrimp paste. Like Indian dishes, Indonesian cooking entails grinding the numerous spices to a fine paste and frying the mixture till they emit their unique aroma and flavour. Curried vegetables Stuffed rice rolls Stuffed pancake roll Tamarind chicken Unlike Chinese or Thai cuisine, in Indonesian cuisine the flavour of the main ingredient, be it fish, poultry or vegetable, is enhanced by addition of a wide variety of spices. After all, Indonesian islands were once the original Spice Islands, which were sought out by traders from all over the world for spice trade. Abundance of cardamom, coriander, cumin, turmeric and chillies mark the pungent spiciness of a typical Indonesian dish. Indonesian food comes in three degrees of spiciness- hot, hotter and hottest. Chillies, both fresh green ones and the dried red ones are used in chopped or paste form in abundance. However, to temper the sharpness of the chillies a lot of coconut cream and coconut milk (Santan) is added to the sauces.

    E ATING THE I NDONESIAN W AY R ice is a staple in the Indonesian diet and is part of every meal. Nasi goreng (fried rice with vegetables) is one of the most popular rice dishes. A special dish is lontong (compressed rice cooked in banana leaves for six hours). Sometimes people eat noodles instead of rice. Other common foods are tahu (soybean cake) and tempe (fermented soybeans wrapped in a banana leaf). Most Indonesians prefer fish, poultry and eggs to red meat. Indonesian Muslims do not eat pork. I ndonesian food is usually hot and spicy. Some dishes are accompanied by a red chili paste called sambal . A spicy peanut sauce is used as a dressing for salads, satay (skewered strips of grilled meat) or gado gado (cold vegetable salad). I ndonesians enjoy creamy avocado juice and clear, sweet, perfumed Java tea. Cendol is a drink made with brown sugar, jackfruit, gelatin, coconut milk and the juice of a pandana leaf. Kopi tubruk (literally, "collision coffee") is prepared by pouring boiling water onto ground coffee. A wide range of fruit is found in Indonesia, including durian, star fruit, salak, rambutan, mango, mangosteen and papaya. In some areas people eat dog meat, mice, eels, roasted lizards or tretis (partially digested grass from a cow's stomach).

    Chart a country's cuisine and you can chart its history. Nowhere is this more true than in Indonesia, the fifth largest country in the world, an archipelago consisting of 18,000 islands, spanning one-eighth of the globe and occupied by 250 ethnic groups. Here tremendous ethnic diversity coupled with wave upon wave of cultural influence adds up to a world of pleasure for the culinary adventurer. History Indonesia's indigenous techniques and ingredients merge with influences from India, the Middle East, China and Europe. And then there are the New World products brought by Spanish and Portuguese traders long before the Dutch colonized the islands. Aficionados can only skim the surface unless we travel Indonesia itself. Most restaurants abroad and English-language cookbooks focus on the foods of Java and Sumatra with tastes of tourist-haven Bali. But the cuisines on these islands alone provide us with plenty of opportunity to keep our taste buds happy and our tongues tingling.
