    Research Objectives
    Forty percent of Indonesia’s total population of 182 million live in villages where charcoal and fuelwood are used for cooking. Families consume 10.6 billion kilograms of fuelwood per year. Deforestation is a significant problem throughout Indonesia, and family cooking needs are a primary contributor to this major environmental problem. Can solar technology significantly reduce the environmental damage caused by fuelwood use in Indonesian villages? BPP Teknologi has pioneered the development of solar cooking ovens which are low-cost and made of local materials. Since 1992, these ovens have been field tested on a small scale. Mrs. Suharta is now initiating a 5-year field test program in Eastern Indonesia on Lombok Island, just east of Bali. Eastern Indonesia is endowed with good solar insulation, and three villages have been selected for this study. This is a technology transfer project as BPP Teknologi introduces their basic oven design to the villagers. The villagers will be given hands-on training in the construction of the ovens and the use of materials which are readily and cheaply available on the island. One hundred ovens will be operational in local homes (free of charge). The impact of the use of these ovens on household fueluse will be analyzed, as well as the economics and social changes at the community and household level.

    Indonesian Peanut Sauce Recipe Ingredients
    1 tsp sea salt
    2 garlic cloves, minced (1 tablespoon) 12 chiles de arbol or chiles Japones, softened in hot water, dried, seeded, and minced 1 Tbsp minced galangal or ginger 1 stalk lemongrass, tough outer layers and green parts removed, minced (1/4 cup) 2 shallots, minced (1/4 cup) 1 tsp red miso 3 Tbsp vegetable oil 1/4 cup plus 1 Tbsp sugar 1/4 cup creamy peanut butter 1/2 cup coconut cream 1/4 cup tamarind juice Instructions Pound the salt and garlic in a mortar with a pestle into a fine paste. Add the chiles and pound to a puree. One at a time, add the galangal, lemongrass, shallots, and red miso, in sequence, adding each one only after the previous ingredient has been completely pureed and incorporated into the paste. Transfer to a bowl or to a glass jar with a right-fitting lid. Refrigerated, the seasoning paste will keep for a month. Or, if using a blender, add all the above ingredients plus the vegetable oil and puree.

        INDONESIAN FOOD AND COOKING
        Indonesian home cooking can be excellent, but finding a restaurant serving good local Indonesian foods in pleasant and comfortable surroundings is very difficult. Some tiny food stalls and "Warungs" offer one or two excellently prepared local specialties but the primitive surroundings easily spoil the experience for many visitors. On the other hand, Indonesian food served in well-decorated and comfortable Western-style restaurants are often specially prepared for foreigners and have not much similarity with the delicious authentic version.
        The centerpiece of any Indonesian meal is steamed or boiled rice. Accompanying dishes include various preparations of chicken, duck, beef, (in Bali also pork), goat, all kinds of seafood and vegetables, either steamed, boiled, braised, stir or deep fried, roasted or grilled over coconut husks. Other ingredients used to give Indonesian food its unique flavours are chillies, coconut, peanuts, garlic, ginger, saffron, basil, cardamon, lemon grass, lime, nutmeg, pepper, shallots, soy sauce, tamarind, turmeric and several kinds of shrimp paste. (They weren't called the Spice Islands for nothing, you know.) The result is usually very tasty but not unbearably hot - as long as you avoid the small green chillies and different kinds of 'Sambal' which are often served together with your meal.

    Originating in Malaysia and common in Indonesia and Singapore, beef rendang is beef and onion sauteed in a rich spice paste of ginger, garlic, chile, coriander and cumin; then simmered in coconut milk with lemon grass and tamarind water. In the 16th century, waves of Chinese laborers flooded Malaysia to work in tin mines. The Malaysian women they married and their daughters were called nonyas . The cooking they created combines Chinese methods and ingredients such as dried mushrooms and fermented black beans with the local cuisine. Nonya cooking is also distinguished by its fiery heat and its emphasis on tart flavors, created through using tamarinds, mangoes, and other sour fruits.
