Alternative Irish Joke Home Page Go straight to Recipes and ignore my ramblings This food page is dedicated to traditional working class foods that I had the pleasure of living on as a young man in Dublin. I used to believe that food had to be either boiled to a pulp, stewed or covered in grease. It was only when I came to Australia that I was able to eat vegetables that had a crunch to them (I still prefer my veggies boiled to a pulp). Food was easy to prepare then, pop it in the pan and forget it. A dinner was not a dinner without a potato on the plate. I remember when Spaghetti Bolognaise was introduced to my home; my father had to have potatoes instead of spaghetti. Today Irish cooking is becoming as famous as French cooking, thanks to the likes of Mary Kinsella for her book "An Irish Farmhouse Cookbook"; Keith Floyd for "Floyd on Britain & Ireland" and numerous magazines like Family Circle's "Step by Step Irish Cooking. As I said previously this is a page of working class foods, you will find no Lobster of Pheasant recipes on this page.

It doesn't matter whether great grandmother came by ship from Norway or grandfather was a boat person from Vietnam. When March 17 rolls around, everyone no matter where he or she comes from is a little bit Irish! And, being a little bit Irish means dishing up some good Irish food corned beef and cabbage, potatoes, shamrock rolls, Irish soda bread, Irish lamb stew and green beer.
Lowly cabbage isn't so lowly any more
The lowly cabbage the plainest of plain vegetables now gets rave reviews from the nutrition world. Cabbage is a good source of vitamin C (one cup raw coarsely shredded or sliced supplies around 33 milligrams). It's low in calories with one cup amounting to only 15 calories. Vegetables contain dietary fiber, often called roughage. Cabbage contains insoluble fiber in the form of cellulose. It is not digested by humans and does not dissolve in water. Research suggests that this insoluble fiber increases bulk and speeds up the movement of body wastes though the intestines and the colon. The outer leaves of cabbage are nutrient-rich, so choose a head without loose or wilting outer leaves that would be discarded. Look for a solid, compact head that is heavy for its size and shows no discoloration. Cabbage keeps best when wrapped in plastic and placed in the refrigerator crisper.

"People sometimes say to me that Irish cuisine sounds like an oxymoron," says Cullen, a jovial man who speaks with the accent of his native Dublin. "To which I say, 'Lord, forgive them. They know not what they do.' In Ireland, there has been absolutely wonderful food before and since the famine."

The days of bad jokes about Irish food are over, and the inert image of Irish cooking - with its legacy of famine, emigration and war - is being eclipsed by a modern, inspired and cosmopolitan approach. Just in time for St. Patrick's Day, people are buzzing about a new Irish cuisine. So no more proletarian pub grub? No more rustic simplicity and hearty cooking? No more bacon and cabbage, soda bread and scones, bangers and mash? Not exactly. The fact is that the new Irish cuisine is a style of cooking that uses local ingredients and is based on traditional dishes, a script that British food writer Theodora FitzGibbon suggested nearly half a century ago. "The best food of a country is the traditional food which has been tried and tested over the centuries," she said. "It's food that suits the climate and uses the best products of that country. . . . It's part of its history and civilization, and, ideally, the past and the present should be combined so that traditional food is not lost under a pile of tins or packages."
