The title should suggest to you that the author has strong feelings on the subject. Well, strong enough. Irish cooking is understandably afflicted with associations with Ireland, arguably one of the most beautiful and over-romanticized pieces of real estate on the planet. This causes many Irish cookbooks which we've seen in the US to become (a) pictures of beautiful landscapes gorgeous, but inedible, and casting no particular illumination on the food itself: (b) folios of lovely Irish-style calligraphy pretty enough, but typically hard to reproduce small enough to get in very many recipes: and (c) collections of misunderstood or mistranscribed "traditional" recipes which no one here has eaten for a very long time. These three factors taken together are something which, in our household, we refer to as "the leprechaun factor". Cookbooks with too high a Leprechaun Factor never make it out of the bookstore to our shelves (where at last count about 550 cookbooks of various kinds reside). The following is a list of some of the cookbooks that did make it home. We recommend them to you: the recipes work, and the writing in them is either enjoyable, or clear, and usually (thankfully) both. The vast majority of them are paperbacks.

Until more US publishers see the light and start bringing out new editions of his works, those interested in getting their hands on the harder-to-find books, especially the "Russian" and "Book of Years" series, might try the following source: PS: if you're scanning in other book sources for P's novels, be sure to specify his first name, not just "Morwood": otherwise you'll get a lot of listings for the Morwood who's a Latin scholar, or the one who's a religious writer. The image of leaden Irish cooking - a legacy of famine, emigration and war - is being put to rest by a modern, inspired, cosmopolitan approach. Just in time for St. Patrick's Day, people are talking about the new Irish cuisine. No more rustic simplicity and hearty fare? No more proletarian pub grub? No more bacon and cabbage, soda bread and scones, bangers and mash? Not exactly. The new Irish cuisine is a style of cooking that uses local ingredients and is based on traditional dishes, following a script that British food writer Theodora FitzGibbon proposed nearly a half-century ago. "The best food of a country is the traditional food which has been tried and tested over the centuries," she wrote. "It's food that suits the climate and uses the best products of that country... . It's part of its history and civilization, and, ideally, the past and the present should be combined so that traditional food is not lost under a pile of tins or packages."

here's just nothing like walking in from a frosty cold winter's day, into a house warm with the scent of Irish Stew and Soda Breadthe rose-covered teapot filled with Earl Grey, the butter slightly melted in an antique flowered saucer. My grandmother could whip up a chicken pie in the twinkle of an eye it seemedso good that there were never any leftovers. On St. Patrick's day it was corned beef and cabbage, a big Colcannon, and maybe a glazed TeaCake for dessertthe mouth-watering smell of the corned beef, cooking in its spices and garlic, was just divineand the sandwiches the next day, made from the leftover roast, are fit for a King! I like to make an apple-barley pudding, and leave some for breakfast the next morning, eaten cold with cream poured over it.
t has been said that the food of the British Isles does not have the richess of flavor and texture of, say, French or Italian cuisinebut you will find that these recipes have a richness all their own; they were created to be hearty and flavorful for a people whose growing season was limited by cold weather, and who needed dishes that would pull them through many a wintry night. Most of these are fairly simple, and *all* of them are well worth the effort. These are a few of my family favorites: everyone has there own version, of course, but I think you'll like these! Enjoy!!

Cookbook celebrates Irish cuisine
By Gwen Schoen Bee Staff Writer In the tradition of St. Patrick's Day, many American cooks will be serving corned beef with steamed cabbage or boiled potatoes on the side. After that nod to Irish cooking, they will turn back to other cuisines, forgetting that there is much more to Irish food than simple corned beef and cabbage. "Unfortunately, it seems the only time people think about Irish food is around St. Patrick's Day," says cookbook author Margaret Johnson. "Even then, they figure it's just corned beef and cabbage. In fact, corned beef is an American invention. The people in Ireland never eat it." That attitude and a desire to dig into her Irish American roots inspired Johnson to write four cookbooks on Irish cooking. Her latest, "The New Irish Table" (Chronicle Books, $24.95), was released a just a few weeks ago. The book showcases dishes that Johnson discovered at restaurants and pubs during her travels in Ireland. Of the 75 recipes in the book, most were inspired by traditional dishes and updated to reflect the culinary renaissance in Ireland. You will not find a recipe for corned beef and cabbage. Instead, you will find orange almond cake, colcannon made with potatoes and leeks, and lamb cutlets with honey, apricot and tarragon sauce.

TIPS: Remember to skim any froth from the pot just before adding vegetables , so the scum does not stick to them.
You can cook corned beef just in water, because it will cook for long enough to create its own flavorful stock. Cabbage will smell (some say like ammonia, some say like rotten eggs), and cabbage will only smell and taste more pungent the longer you cook it , contrary to convention. Did you know that the amount of hydrogen sulfide (the rotten egg smell producer) in boiled cabbage will double between the fifth and seventh minutes of cooking? Don't overcook the cabbage.

Everything's Coming Up Irish in Shamrock, Texas Irish Soda Bread
by Patricia Mitchell A lmost all big cities and many small towns have St. Patrick's Day celebrations, but few embody the spirit of the day, raw exuberance and small-town freshness personified by the annual celebration in Shamrock, Texas. Over 100 years later, Shamrock (population 2159) is known for at least three things its large and lively celebration of St. Patrick's Day, its piece of the Blarney Stone, and its water tower, touted to be Texas' tallest at 190 feet.

If one searches the internet using the term "Traditional Irish Soda Bread" an amazing number of recipes appear. 98% of them incorrect. Would "French Bread" (15th century) still be the same if whiskey, raisins, or other ingredients were added to the mix? So why is traditional "Irish Soda Bread" (19th century) not given the same respect by modern-day bakers? "Tradition" the handing down of information, beliefs, and customs by word of mouth or by example from one generation to another without written instruction
