Otto Ristorante in Sydney’s Woolloomooloo is again the site of pizza and pasta classes for children aged 6-14, 22 February. Australian Gourmet Traveller contributor Lynne Mullins and chef Micah Rogers are conducting these monthly classes, teaching children how to make either pasta with pomodoro sauce or authentic Italian-style pizza. Come out, come out, wherever you are, and bring your munchkins-your 12-and-under set, that is. Food writer, industry consultant, and educator Lynn Fredericks returns to The James Beard Foundation this month, encouraging adults and children to join forces in the kitchen and "use their noodles," both literally and figuratively. "What would you make for a four-year-old who calls a green grape 'too spicy'?!" Susan Brenna asks in an article in Newsday about eating with children. Fredericks has some ideas. "The key to my menus with children is to come up with good-for-you twists on old standards, with a surprising side dish that challenges their palates," Fredericks advises. In her family cooking classes at the New School and Peter Kump's New York Cooking School, she has enticed even the most finicky to prepare and sample blue cornbread, Chicken Goober Stew (the use of peanut butter in this Nigerian dish seems to intrigue kids), Thai-inspired turkey meatball soup, and banana crumble. Fredericks is also author of the recently published Cooking Time Is Family Time

pasta pizza Serves 6 to 8. Prepare pasta according to package directions,reducing cooking time by 1 to 2 minutes; drain.

  • 1 pound Ziti, Rigatoni or other medium pasta shape, uncooked
  • 1 tbsp. olive oil or vegetable oil
  • 1 8-oz. can tomato sauce
  • 1 tbsp. dried mixed Italian herbs, or 2 tbsp. minced fresh oregano and 2 tbsp. minced fresh parsley
  • 1/4 cup grated Romano cheese
  • 1 16-oz. can crushed tomatoes, or two cups chopped fresh tomatoes
  • 2 cloves garlic, minced
  • 1 tsp. hot red pepper flakes (optional)
  • 1 green bell pepper, ribs and seeds removed, chopped
  • 1/2 cup chopped carrots
  • 1 can chickpeas, rinsed and drained
  • 6 green olives, sliced
  • 1 cup shredded part-skim mozzarella cheese Prepare pasta according to package directions, reducing cooking time by 1 to 2 minutes; drain Spray a 9 x 13 x 2-inch baking dish with vegetable cooking spray. Transfer pasta to baking dish and toss with the mixed herbs, tomato sauce and Romano cheese. Mix the garlic and hot red pepper flakes with the tomatoes and pour all over top of pasta. Layer the remaining ingredients, ending with the mozzarella. Bake at 400-o F for 15 minutes and serve Each Serving Provides: 346 Calories 15.5 g Protein

  • 30 Jumbo Shells or 13 Manicotti Shells, uncooked
  • 3 medium zucchini, grated
  • 2 tsp. garlic powder
  • 1 cup Italian-style bread crumbs
  • 1 1/2 oz. pepperoni slices, torn into small pieces
  • 1 large egg white
  • Sauce:
  • 3 cups low-sodium tomato sauce
  • 1 tsp. dried oregano
  • 1 tsp. dried basil
  • 3 oz. part-skim mozzarella cheese, grated
  • 1/4 cup grated Parmesan cheese Prepare pasta according to package directions. While pasta is cooking, preheat oven to 450-o F. Toss the zucchini with the garlic powder and put it into a colander. Let it sit 5 minutes and then squeeze out as much moisture as possible. In a large bowl, mix zucchini mixture with bread crumbs, pepperoni and egg white, stirring well. In a medium mixing bowl, stir together the ingredients for the sauce. When pasta is done, drain well. Rinse with cold water and drain again. Stuff the shells with the filling mixture and arrange them in a 9 x 13 x 2-inch pan. Spoon the sauce over pasta and sprinkle with the mozzarella and Parmesan cheeses. Bake uncovered 15 to 20 minutes or until the cheese has melted.

ITALY Pizza Crust (Focaccia) 1 cup warm water 1 package yeast 1 teaspoon sugar 2 teaspoons salt 4 tablespoons olive oil 2-1/2 cup bread flour, or combination whole wheat flour and all-purpose flour Garlic Oil made from olive oil and fresh garlic Fresh rosemary leaves Place the water in a large, warmed bowl. Add the yeast and sugar, and let sit for 5 minutes. Stir in the salt and olive oil. Gradually add the flour(s); dough should be firm. Place dough on a floured surface and knead until smooth, adding flour as necessary. Place dough in a greased bowl, cover, and let sit in a warm place for 1-1/2 hours. Punch down dough. Knead for a minute, then let sit for 10 minutes. Grease cookie sheet.

    Food Tips and Recipes Pastas and Pizza ASPARAGUS AND PESTO PASTA (added 4/18/02) ABOUT THAT PARMESAN (added 4/18/02) EASY HERB FOCACCIA BRICK OVEN PIZZA SPINACH / TOTELLINI SALAD NO-BOIL LASAGNA NOODLES ... PERFECT RISOTTO EVERY TIME ASPARAGUS AND PESTO PASTA
    INGREDIENTS
    1 lb. fresh asparagus
    3 tbsp. chopped fresh basil
    1/4 cup chopped walnuts (or pecans)
    1/3 cup freshly grated Parmesan cheese ( and we mean VERY fresh; it makes a difference. SEE CHEESE NOTE BELOW)
    1 clove raw minced garlic
    1/4 tsp. salt
    3 tbsp. good quality virgin olive oil
    1 lb. your favorite pasta ( spaghetti or linguini works best)
    DIRECTIONS 1. Wash the asparagus and chop into 1/2 inch pieces. Steam them until bright green in color; set aside. 2. Make the pesto; put 2 tbsps. of the olive oil, with the basil, the nuts, the garlic, salt and the cheese into a blender and chop roughly. 3. Cook the pasta and drain it well; then add the remaining 1 tbsp.oil to the hot pasta. 4. Stir the asparagus and the pesto thoroughly into the pasta and serve immediately. Add more cheese or oil at the table to taste.

    January 2000 Brrrrrr! Is it cold enough for you? Before you start complaining about the weather, just remember how hot it was in the summer (and fall, for that matter). I hope you all enjoyed your holidays and celebrated the New Year in style. Having struggled through most of December with various strains of colds and flu's, I was not too thrilled with the idea of standing in my ice-cold kitchen cooking elaborate meals while watching my breath freeze and losing all sensation in my fingers and toes! With the temperatures reaching the zero mark, my mission is to get in and out of the kitchen as quickly as possible without surrendering to the conveniences of instant ramen, pizza delivery, or Lawson's oden (OK, I admit it, I lost the battle!!) Ahem.... Anyhow... this month's column is dedicated to PASTA - my favourite of all foods. Here are a few quick pasta dishes to help you get out of your kitchen as soon as possible and back to the warmth of your kotatsu . By the way, don't forget to warm up the plates or your pasta will be cold before you get it to the table! Salute!
