This year was no exception since Parvine had taken over my kitchen as I was still convalescing from some unscheduled surgery. Cooking is even more fun for Parvine when there are extra people to enjoy the food. This particular dinner was served to 4th and 6th generation Texans who usually think of party food as barbecue, grilled Texas quail, or catfish. Never have I seen food disappear so fast! Although it was perfect for my diabetic meal plan, I was glad she'd made huge amounts of food as our Texas friends and my husband, all of whom do not have diabetes, were back for seconds. For an appetizer, Parvine arranged a tray of small wedges of pita bread, feta cheese, broken walnut pieces, and fresh herbs such as sprigs of mint, basil, and parsley. Since a dinner party in her home and mine usually ends up with the guests gravitating into the large kitchen to chat while she (or I) are putting the finishing touches on the meal, she merely placed the large tray of appetizer ingredients and an assortment of beverages on a vacant kitchen eating bar for everyone to help themselves while they moved about the kitchen or sat on bar stools to chat while the cooking was finished. This is a familiar appetizer to my husband and me, and often is used by us for a quick lunch. You have to "guesstimate" your exchanges if you're on a diabetic meal plan, counting your carbs and exchanges as given with the recipe.

Breezy Attitude Wholesome flavors and simple presentation make the fare at Yas a breath of fresh air By Joseph Izzo Jr. I T WAS JUST ABOUT THE TIME that our entrees arrived when the memories hit. We were dining at Yas, a Persian restaurant in San Jose. The aromas coming from the dishes laid at our table triggered memories of the early '70s for me, a time when ethnic food around the South Bay still meant spaghetti and meatballs. Original Joe's was the Taj Mahal. The only Persian restaurant in the area back then was an eatery over by San Jose State called Manssur's. My partners and I were just cutting our teeth on restaurant reviewing and hence found the place so exotic that one step through the beaded entrance brought visions of flying carpets and dragons with ruby scales. But that was a long time ago. Since then, Persian restaurants have proliferated around the South Bay. Many doors are opened now. Some are good, some not so good, some built around the fast-food concept, others with not a clue about why they're in business. Among the best I've sampled so far is Yasshort for jasmine, which means garden.

    Servings: 6 Preparation time: 20 minutes Cooking time: 25 minutes Wrappers 1 package ready-made, large sized egg roll skins, removed from the package and covered with a dish towel to prevent drying filling 4 cups chopped scallions, or garlic-chives (gandana) 1/2 cup chopped fresh parsley 2 tablespoons vegetable oil 2 teaspoons salt 1 teaspoon freshly ground pepper 1 bird or serrano chili, finely chopped yogurt sauce 1 small cucumber, seeded and grated 1 clove garlic, crushed, peeled and chopped 1 cup fresh mint 1 teaspoon mint flakes 1 teaspoon salt 1/2 teaspoon freshly ground pepper 2 cups plain yogurt, beaten Note When using egg roll skins, frying the boulani gives the best results Boulani is a baked or fried, stuffed bread. It is made by filling a square piece of dough with a garlic-chive mixture and folding it diagonally into a triangle. Traditionally it is filled with gandana (similar to garlic-chives) and served with a yogurt sauce. Gandana is available at Middle Eastern markets; scallions, however, make a good substitute. 1. Combine all the ingredients for the filling using a rubber spatula (do not use a food processor as it makes it too liquidy) and set aside.

It has every imaginable Persian recipe, it is laid out clearly and easy to follow with beautiful photographs. Some of the recipes are very elaborate but after having done them a few times they become easy and quicker to make. A great book for everybody who loves to cook. Both, children of Persians who grew up outside of Iran and don't know how to cook the food their moms cooked for them as well as just people who enjoy good, rich food will really appreciate this book. Excellent reference on Persian cuisine I was first introduced to Iranian cooking in college while living with an Iranian roommate and fell in love with Persian cuisine. Every dish I have prepared out of New Food of Life has become a favorite in my repertoire of recipes. Many recipes are time-consuming, but well worth the effort, similar to the philosophy of French cooking. I would highly recommend this book to anyone who loves good food and loves cooking. This book is also filled with beautiful photographs, artwork and interesting information about Iranian culture and traditions (esp the last section of the book, which details traditional ceremonies and holidays), which also makes this a nice reference for people interested in Iran's rich culture and history. This is one of my favorite cookbooks. Highly recommended.
