One Savoy Cabbage

Two pounds pork
One pound of ``breakfast" sausage links
½ pound smoked bacon
One pound Kielbasa
One onion
One SMALL can of Tomato paste or sauce
3 to 5 Bay Leaves salt, pepper, oil, sugar secret herbs and spices First, get a jar of Polonaise Sauerkraut and a pound of kielbasa. Don't use watered down sauerkraut that comes in a plastic sack with lots of water and vinegar. The final product is only as good as the best ingredients you can get. Then, get the best beef and pork with a minimum of fat. Cut off all that you can before cooking. Get a half pound of thick sliced bacon. If you cannot find a Savoy cabbage a regular cabbage works just fine. Start by getting a large pot of water boiling. Add the sauerkraut. Let it bubble away. Cut up the beef and pork into little fork size squares and brown. Generally this takes two frying pans (one each for beef and one each for pork). Season with secret herbs and spices. Faworki (Chrust) made for Tuesday before Ash Wednesday.

Just south of Glendale, at the western fringe of Eagle Rock, there's a minimall at Verdugo Road and York Boulevard that has just about everything you could ever need: minimart, dry cleaner, hair salon, chiropractor, Filipino suckling pig takeout shop . . . and one of the few Polish restaurants in Southern California.
Polka has been there for years, but somehow it's never learned to raise its prices, so it's still one of the best bargains in town. You can have a big meal for as little as $6 even $5 at lunch, though in that case the entree will have to be kielbasa. The most you can pay is $9, and that's for everything but a beverage: mug of homemade soup, Polish salad, meat entree, starch (rice, potatoes or garlicky noodles), four vegetables and even a tiny dessert.
It's hearty food none meatier but Polka does warrant the sign in its window reading "So Healthy Nutritious," at least more than you might think. This is sort of light Polish food. Most of what's on your huge plate is vegetables.
The decor will make you giddy, unless this is how you decorate your home namely, with everything that has ever come your way in life. The walls are loaded with random stuff, starting with half a dozen clocks. Plush animal toys hang from the ceiling along with Christmas lights. There are hearts, butterflies, plastic greenery, Polish beer bottles, plaster copies of Roman sculpture, a photo of the pope, a Rio de Janeiro license plate. The soundtrack offers music from half a century ago Marlene Dietrich, Louis Armstrong and what sounds like the occasional Polish ballad.

DYEING EGGS EGG DECORATING What would be Easter without decorating and coloring eggs? Here are are some homemade dyes you can use and some different decorating ideas: The first thing you need is either hard boiled or blown eggs. If you use hard boiled eggs hey must be kept refrigerated if you intend to eat them Do not eat if they have been left our or painted with acrylic paints. If you want to keep your decorated eggs it is best to use blown eggs. However, blown eggs are much more fragile and harder for young kids to handle. To make a blown egg poke a small hole in each end of the egg with a large needle. Push needle into egg and twist around to break yoke.   • Completely thaw the frozen sausage
  • Cover sausage in water in an appropriate sized pot. Slowly boil the sausage until it is no longer pink in the middle and the juices run clear. Boil 10 to 15 minutes, and do not over boil.
  • Immediately after boiling, you may pan fry, grill, or use something like a George Foreman cooker to slightly brown the sausage. You may brown the whole ring or cut into links. Barzo's cooking method is to use beer to replace water for the boiling process. Then use a George Foreman cooker to brown the sausage. If boiling is not available, you may place the thawed sausage in foil and water or beer to cover it and place it on a grill. As the sausage is steaming/boiling on the grill you may have to add liquid as it evaporates quickly. After sausage is cooked, just place the sausage on grill to brown. Do not let the sausage dry out.
