    Medieval Russia Food and Drink
    There isn't much information out there about medieval Russian recipes. We know what foodstuffs were available to them, but not necessarily what they did with them. They ate lots of leavened bread, had many root vegetables available to them, notably turnips and beets, and many other grain products that could be cooked and eaten in the form of a frumenty or a grain-pudding. Fish were widely available in many varities. Being mainly a forest environment, Russians would have had access to many different game animals.     M y name is Olga Zorina. I am twenty-four years old of Ukrainian/Russian origin.
    Let me present the introduction and two recipes from my book. This is my first book; it is about Russian cooking. My book includes eighty recipes and more than ten thousands words.
    Why do I write about it? I have a university degree in humanities, studying culture and folklore there and I think I can share my knowledge of traditional Russian cooking with English people.
    This book has many fresh and interesting ideas. People in this country cook and eat food from around the world, so why not to try something new?
    In future I plan to write more books about Eastern European cooking Introduction W orking on this book I tried to gather the most popular recipes of Russian food. First of all, these are traditional Russian recipes that have been cooked thorough ages, and they are still appreciated nowadays. Every country has its own unique cuisine. This is the part of national culture, something country can be proud of. My aim is to introduce Russian cuisine to you. You are already familiar with French and Italian meals, even oriental cooking is popular in Britain. And I must admit that such dishes as "Bliny" and "Borsch" are known to you. But this isn't all.

    By Rachel Feit The first time I went to the former Soviet Union, to Kiev and to the Crimea, I steeled myself for what I imagined to be a culinary wasteland. Brought up on Cold War images of endless food lines set against spartan, gray buildings, I expected the cuisine there to be unpalatably bland. I was wrong. Alighting from the plane into a sunny summer day, I was greeted with a three-course meal of Ukrainian Borscht, cured roasted meat, and delicate cheese-and-jam blini. From that moment, the eating never stopped. I remember the fruit trees there, dripping with apricots, plums, cherries, figs, and olives. I was stunned to discover artichoke plants, rosemary, and arugula growing practically wild by the side of the road. In the cities, food vendors installed themselves on every corner, selling rice pilaf, little fried pastries, sausages, and dumplings. Meanwhile, the markets were crammed with foods both locally produced and imported. In terms of cuisine, I quickly discovered that an incredible amount of cultural diversity characterized the foods we ate; food there involved not just stewed beets, cabbage, and potatoes, but colorful, aromatic spices from Central Asia, nuts and olives from across the Black Sea, and foodways representing the most distant folds of the colonial sprawl that was once the Soviet Union. My strongest impressions of the three summers I spent in the Crimea inevitably involve the food. After my first trip, I reluctantly returned home, a pious devotee to Russian food.
