"The last official barbecue holiday of the season! Make it complete with two easy last minute salads: A Star Spangled Banner Watermelon Salad and a Black Bean Corn Salad which is also perfect for using leftover grilled meats." Black Bean Corn Salad Ingredients:

  • 2 cups grilled chicken, steak, or pork
  • 1 tomato, chopped
  • 2 cups cooked corn (approx 15 oz. can)
  • 1 can black beans
  • 1 1/2 cups Monterey Jack cheese, diced
  • 1 avocado
  • 1/4 cup fresh cilantro, snipped
  • lettuce leaves
  • Dressing:
  • 1/4 cup lime juice
  • 2 tablespoons honey
  • 2 tablespoon oil
  • 1/2 teaspoon chili powder (more or less to taste)
  • salt and pepper to taste
  • 2-3 drops Tabasco sauce (optional) Method: Cut meat into bite-size pieces, place in a bowl. Chop tomato, cut corn from cob or drain canned corn, drain and rinse black beans, dice cheese, peel and dice avocado - add all to bowl. Snip cilantro on top. Combine all ingredients for dressing and shake well. Pour over salad ingredients and toss. Serve salad on lettuce leaf. Star Spangled Water Melon Salad Watermelon, cut in 1-inch think slices

    Summer Salads Dateline: 07/03/98
    Ever feel like you're in a food rut? You're not alone, and for good reason. Here we are facing yet another summer holiday (Independence Day for us Americans) where tradition sets the table (outdoor barbecue fare), the activities (fireworks), and even the color scheme (need I say it?). Don't get me wrong, I'm not knocking tradition, but I'm a little tired of the same old cook-out dishes. Okay, so we've switched to low fat mayonnaise on our potato salad. Isn't there something else we can serve that appeals to our sense of tradition and shows off our cooking savvy too? Well my quest let me to the web, of course, and I found lots of low fat alternatives to your standard potato salad. For purists, I have included healthful versions of the classics, but you'll also find some recipes to liven up your celebration. Toss tradition to the wind, if you choose, or just add a recipe or two to your staples for a little refreshing zing. The choice is yours. That's the great part about being a host: You get to make whatever YOU want. How's that for independence? Happy Fourth.

    CABBAGE SALAD
    - Cabbage is popular as always
    CUCUMBER SALAD
    - Best served with pork or lamb roast
    POTATO SALAD
    - Kept a secret for many centuries causing invasion of Persians, Turks, Hungarians and Germans. Peace to all of them the recipe is out. Summer Salad - serve 6 2 large tomatoes
    2 red ( green or yellow ) bell peppers
    2 cucumbers
    4 green onion diced
    3 Tbls olive oil
    3 Tbls apple cider vinegar
    4 Tbls minced parsley
    1/2 Tsp minced garlic Wash and dice tomatoes. Place them in a bowl. Slice red bell peppers and cucumbers into very thin strips and add with tomatoes and the rest of ingredients. Toss gently. Best if chilled for 1 hour before serving. top of the page CABBAGE SALAD - serve 6 1 small cabbage cut in very, very thin slices 2 Tbls olive oil 3 Tbls apple cider vinegar salt and pepper to taste Place the thin sliced cabbage in a large bowl and spread the salt a bit more than you use to ( excess salt will drain later ). Mix thoroughly and place for 1 hour in refrigerator covered with plastic wrap. After 1 hour drain and squeeze the liquid from the sliced cabbage. Add olive oil, vinegar and pepper to taste. best if served with Roasts or fatty foods. top of the page CUCUMBER SALAD - serve 10 6 large cucumbers 2 Tsp salt 3 Tbls apple cider vinegar 4 Tbls olive oil 4 Tbls minced scallions 3 Tbls minced dill or parsley not both salt and ground pepper

    • 1/2 pound green grapes
    • 1 dozen walnuts
    • Lettuce
    • French Dressing
    • 1 cup watercress
    • 1 cup dandelion greens
    • 6 slices onion
    • French Dressing ( see recipe below)
    Directions: Make sure the dandelions is young and fresh. Wash the watercress and dandelion leaves and drain well. Toss together and place in a bowl or plate. Add sliced onions on top, then drizzle French dressing over all. Tomato Chicken Delight
    • 6 medium tomatoes
    • 3/4 cup diced cucumber
    • 1/2 cup diced cooked chicken
    • 1/4 cup mayonnaise
    • Lettuce
    • Cauliflower pieces
    Directions: Cut tomatoes in halves, carefully scoop out the pulp. In a separate bowl combine the tomato pulp, chicken, cucumber with the mayonaisse. Fill tomato halves with the filling. Arrange on lettuce leaves then top each cup with parsley and cauliflower.
