Most Seychellois are Catholic and the majority are avid churchgoers, but there is a widespread belief in the supernatural and in the old magic of spirits known as gris . Sorcery was outlawed in 1958, but there are a number of bonhommes and bonfemmes di bois practising their cures and curses and concocting potions for love, luck and revenge. Kreol seselwa daube , a sweet sauce or stew; rougaille , a tomato-based sauce used with fish, sausages or as a side dish; carii coco , a mild meat or fish curry with coconut cream; fish marinaded in lemon; and , a local variety of spinach.

In a place where you can cast a net and come up with “dinner” and climb a tree to pick a snack, the culinary arts have evolved to produce flavors pleasing to both basic and sophisticated tastes. The extraordinarily unique island Creole style merges French, African, Chinese, Indian and English heritages. Blending spices and curries, with locally abundant coconut milk and breadfruit, and varieties of flavorful seafood, the Seychellois have refined meal preparation to a celebration of the best their islands can offer. Fish is plentiful, varieties are abundant and it is always an excellent menu selection. Typical fish delicacies include succulent red snapper ("bourzwa"), tuna steaks unlike any elsewhere, kingfish and, if you're lucky enough to find it, fillets of parrot fish with the most tender of meats. Smoked sailfish is a common appetizer; the wafer thin slices make up a refreshing salad and is a tropical version of smoked salmon.

Area: 444 sq. km; approximately 2.5 times the size of Washington D.C.
Major Islands: Mahe and Praslin.
Cities: Capital Victoria.
Terrain: About half of the islands are granitic in origin, with narrow coastal strips and central ranges of hills rising to 914 m. The other half are coral atolls, many uninhabitable.
Climate: Tropical marine. People Nationality: Noun and adjective Seychellois. Population (1999): 80,410. Annual growth rate (1999): 1.7%. Ethnic groups: Creole (European, Asian, and African). Religions: Catholic 86.6%, Anglican Church 6.8%, other Christians 2.5%, other 4.1%. Languages: Official languages are Creole, English, and French. Culture There is no indigenous culture in the Seychelles, but aspects of African origin have survived. The government has formed the National School of Music and the National Cultural Troupe to foster a Cr©ole cultural identity and tradition. The sombre moutia is the typical dance of the Seychelles, with strong African and Malagasy rhythms. The songs are prayers which the slaves turned into work chants, and they're accompanied by slow, repetitive dance routines. The moutia is one of those participatory affairs, where everyone has to get up and join in. Seychellois music is a blend of Indian, European, Chinese and Arabic - accordions, banjos and violins blend with the makalapo , a stringed instrument, the zez , a sitar, African skin drums and the bom , a bowed instrument.

Swaying palms, exotic flora and fauna, unending beaches, corals, the entrancing Sega Dance or Moutia… charm never seems to wear down in Seychelles. La Digue is a tranquil island with a natural charm. Here, you will find people using ox-carts or traditional bicycles to travel around. You can go in for a good swim at either Praslin or La Digue. The adventurous may go for a walk from Beau Vallon to Victoria, just a couple of kilometers away (1 ½ hrs). The route is a fairly easy climb over the low ridge of hills between Victoria and Beau Vallon Bay; passing historical villages, charming houses and enticing little shops. The Beau Vallon beach is clean and relatively free of rocks. The local people are generally very helpful. You could even share their beach loungers!Towards the north end of the beach there are restaurants, a supermarket, and a couple of shops to while away your time. The Craft Village at Anse aux Pins in South Mahe has a collection of craft shops grouped around a restored colonial building and restaurant. A refurbished museum, it exhibits antique furniture, exotic objects and other aspects of Seychelles culture.

Indians and Chinese (1.1% of the population) account for the other permanent inhabitants. About 1,703 (2000) expatriates live and work in Seychelles. Of those, about 35 are American.

About 88% of the adult population is literate, and the literacy rate of school-aged children has risen to well over 98%. Increases are expected, as nearly all children of primary school age attend school, and the government encourages adult education.
