Indeed, more so than Madrid, Barcelona stands at the forefront of modern Spanish cuisine and is the proud promoter of the Catalan winemakers who now compete with the best in the world. You enter Agua on one level through an intensely blue cube of a building, and descend to a bright, multitiered dining room. The walls feature striking modern Spanish photography, and hanging lights resemble Madonna's Jean-Paul Gaultier breast cones. There's also a delightful patio to the rear, with white canvas awnings. The menu goes light, with dishes like prawns in garlic sauce, grilled clams, juicy lamb chops with juniper sauce, ravioli with salt cod, lobster risotto and several vegetarian options a little something for everyone with nothing on the menu more than $13. Ca l'Isidre's wine list is one of the best in the city, rich in the finest bottlings from both the big producers and the small. The real boon here, as at all the finest Barcelona restaurants, is that prices for exceptional wines are downright low $20 to $30 and the great wines of Spain sell for just a bit more.

Spain is a country that truly enjoys it's food. There's really no such thing as "typical" Spanish cooking. Food in Spain is as varied as its climate, cultures and geography. Most regional dishes are based on quality local ingredients and a relatively simple preparation. Little by little I'll be adding local recipes to this section for you to try. The best known "tourist dish" is probably paella, a rice dish which comes from the Mediterranean area around Valencia. If you want genuine paella, you'll find it in Valencia, or (sometimes) in a specialty restaurant in Madrid or Barcelona. The typical tourist paella bears little (or no) resemblance to the real thing. In the big cities like Madrid and Barcelona, you'll find every type of regional cuisine and some great restaurants. Despite it's distance from the sea, Madrid (for example) has some of the best fish restaurants in all of Europe. For those who really like to eat, the Basque country is a must. In Bilbao, San Sebastian and Pamplona, you'll find some of the best food anywhere. Go with a good appetite, and try the "merluza" (hake) or the "bacalao" (cod). When in doubt in most parts of Spain, the lamb is almost always a good option. And (whatever you do) don't forget to wash down the local specialties with the local wine :)

If French statesman Charles Maurice de Talleyrand-Perigord was correct in his assumption that "the fate of nations depends on what diplomats eat", one may be fully optimistic about the future of Spain. Let it be known, purely and simply that in addition to being the capital of Spain, Madrid is one of the great culinary capitals of the world.. Although there are enormous differences in the culinary styles of the various provinces of Spain, nearly all Spanish cooking shares several traits. Wherever one goes, veal, lamb and pork are the most popular meats, olive oil is almost always used for cooking and wine is an accompaniment to all meals. All of the Spanish are inordinately fond of garlic and eggs, have a passion for lobsters, shrimps and snails, love cured ham, use ground almonds in cooking, adore the spicy garlic-flavored chorizo sausage and use saffron to season many of their foods. Because Madrid is so important a social and culinary center, in addition to finding food typical of Castilla, the province in which Madrid lies, one will also find restaurants specializing in the foods of Galicia, Valencia, Barcelona and the Basque country. The most fascinating dining experiences will be found in Old Madrid, where the city retains much of the physical appearance it has had since the 16th century. Even today, the enticing aromas of roast lamb and suckling pig waft through the cobbled streets and in a large collection of rustic bars and taverns, one will find an enormous array of tapas or appetizers available, almost always at reasonable prices. It is not at all difficult to go along with the local custom of meeting friends twice a day to have a glass of wine or beer, sample tapas and discuss the issues of the day.

Saffron originated in Arabia and was brought to Spain sometime in the eighth century. Since then, saffron has been associated with Spanish cuisine, although the spice is also a favorite addition to French soups and Milanese risotto. This reddish spice is probably the most expensive culinary herb because an ounce of saffron is actually 200,000 dried crocus flower stigmas each hand-gathered crocus flower has only three stigmas.
