Sauce is the lifeblood of barbecue. This statement might be disputed by a few ornery Texans (who would argue that the essence of true barbecue is the long, slow smoking of beef). But for just about everyone else, barbecue simply isn't barbecue without the sauce. The problem is, which sauce? Sauces vary from region to region, stirring strong emotions when local traditions are violated. You could no sooner serve a sweet, sticky Kansas City style sauce to a North Carolina pig picker than you could a South Carolina mustard sauce to a Texas brisket buff. I hope the following sauces start your gastric and creative juices flowing. I encourage you to "doctor" the recipes to create sauces of your own. Hey, if you want to cook with the big boys, you have to have your own barbecue sauce. I'm sure even a Texan would agree with that.

Pei Tsai - Chinese Cabbage
The French call Chinese cabbage Pe Tsa, an adaptation of the Chinese words Pei Tsai, meaning white vegetable. One of the oldest vegetables originating in China, its eventual planting and cultivation over the centuries in France and throughout the globe, is credited partly to Chinese migrants who took the seeds with them wherever they settled.
Asides from its nutritional value, Chinese cabbage (Chinese celery cabbage, Napa cabbage) is a resilient vegetable. After it is harvested, it can be kept in the cool cellar to last from autumn until spring. It is versatile, offering its pliable texture and bland taste to accommodate other ingredients.
Years later, after he eventually settled down in Thailand, this same soup graced our table at every single meal, breakfast, lunch and dinner except on Saturday. On that day my mother would mince the cabbage, mixing it with ground pork to be folded into dumplings. Decades later, when my parents emigrated to America, I took them grocery shopping at one of our gigantic supermarkets. To them, seeing Chinese cabbage among innumerable and unrecognizable vegetables was like meeting an old bosom buddy.
For the remainder of her years, Chinese cabbage became a familiar and tangible thing my mother could count on in this strange new country. Cooking with it gave her a sense of continuity. Recipes using the cabbage, whether to mark the turn of the season or to celebrate holiday allowed her to maintain her cultural tradition, learned long ago in China, which she continued to practice until her death. It was a comforting expectation for us, her children, that come Saturday or Chinese New Year celebration there would always be Chinese cabbage and pork dumplings. When fall arrived, she would buy several heads for pickling.

This doesn't use Bourbon, but it is excellent!
  • 1 1/2 gal. ground Vidalia Onions (16 to 20, about 10 lbs.)
  • 1/2 c. salt
  • 1 qt. cider vinegar
  • 1 tsp. turmeric
  • 1 tsp. pickling spice
  • 4-oz. jar chopped pimentos
  • 4 1/2 c. sugar
Some things I learned on my first batch about 3 years ago ~ The turmeric will turn a plastic or wooden spoon a strange color, I used a blue plastic spoon and now the bowl is a strange shade of green! Draining the onions I used a colander fitted with cheesecloth large enough to go around the onion mixture. Then folded the cheesecloth and wrung out like clothing you hand wash. You need to get as much liquid out at this stage as possible. The original recipe only called for 2 tbsp. pimiento, but I use the whole jar as it doesn't have flavor of it's own and makes a much prettier jar of relish. March is always such a strange month, weather-wise, around where we live.
One day, the temperature gets down in the 20's and we have snow... a day or so later, and the sun comes out and we are in the low 60's. But there are still far too many gray days to my liking. The ground is still too frozen, wet and cold to work outside. The weather isn't good enough to allow me to deep clean or paint inside. I just have a weary feeling, fed up with winter, yet spring is not going to make an appearance for a while yet. My Grandmother Bacon, who passed away last year at 108, would attribute my feelings and attitude to "winter blood". She would have prescribed a dish of cooked rhubarb, guaranteed to "thin the blood that cold winters have caused to thicken". I always hated that annual dosage of stewed rhubarb.

Ingredients
  • 6 lb light dry malt extract
  • 1 lb 20L crystal malt
  • 1.75 oz Bullion bittering hops (10% alpha)
  • 1 oz Cascade finishing hops (5.6% alpha)
  • 2 oz dried organic rosebuds
  • 7 g Edme dry yeast
Procedure
  • Start the boil and add bittering hops
  • After 20 minutes, add malts and 1.5 tsp irish moss
  • After another 20 minutes, turn off the heat, and add finishing hops and rosebuds
    Results
    Expect a starting gravity of 1.053, and an ending gravity of 1.013 (5.1% alcohol). This ale takes a while to condition in the bottle. Initially, the rosebuds imparted some of the desired floral smell (complementing the Cascade hops) and a strange taste. After more conditioning (approx 2 months), the rose taste was subtle but evident, and the resulting I.P.A. was clean, well-bodied, and refreshing!

    The "shopping cart" is a ubiquitous metaphor on the web. Everyone understands it (as Jakob will tell you). You browse product pages and when they find something you want to buy, you hit the button that adds the item to their shopping cart. Later when you are done shopping around, you proceed to "Check out" your shopping cart. Other established tools are "Printer-friendly version of this page" and "Email this page". I get really annoyed at sites that have text content as their bread-and-butter who do not offer these two simple services. So why hasn't anyone put the two together? USAGE SCENARIO I surf around a site that offers text heavy content such as news or articles, and the pages I am interested in, I save to my virtual "Manila Folder." When I am done surfing for content, I go to a page where I can see a list of all the documents I have saved along the way and have them emailed to me, either as a list of links to the original articles online, or a big text document. My grandfather used to keep meticulous newspaper clippings in volumes of big black binders. Why shouldn't the New York Times offer an onlines service that mimics this and allow for more user-centric content retrieval?

    WHAT IS IT? Yahoo's Dewey Decimal System approach of highly coordinated taxonomy has a tree structure where each item has a small pigeon hole at the end where the item is classified. Of course any given item can be put into multiple boxes, but in the end it's a dead-end system where you have to climb up the branch again to browse further. This may be suitable if you have a small number of categories, but quickly becomes unweildly and a maintenance nightmare when you have as many items as Yahoo or any decent sized ecommerce site. In the case of Epicurious the issue is how to classify all the recipes on the site in a way that is easily browsable while at the same time usable. They achieve this by using a facetted approach.
